Black Bean Sweet Potato Tacos

These tacos combine the delicious flavors of sweet potatoes, black beans, cilantro, cheese, red onion and more to come together to make a delicious and vegetarian meal!

Ingredients

  • 1 sweet potato (peeled and cubed into 1/2 cubes)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp pepper (to taste)
  • 1 Tbs olive oil
  • 15 oz can black beans (drained, and rinsed)
  • 8 corn tortillas
  • 1/2 cup grated cheese
  • 1/4 cup diced red onion
  • 1 avocado (diced)
  • 1 bunch fresh cilantro (chopped)
  • 1 lime (cut into wedges)
  • sriracha sauce or hot sauce (to taste)

Instructions

  • Preheat the oven to 400 degrees.
  • Toss the sweet potato cubes in olive oil, and salt and pepper and spread on a baking sheet.
  • Roast for 20-30 minutes until they are golden brown, and fork tender.
  • Warm corn tortillas either on the stove top with a small frying pan sprayed with cooking oil for about 1 minute or in the microwave for about 20 seconds.
  • Put all other ingredients in serving bowls and place on table.
  • On your plate layer 2 corn tortillas (1 doesn’t seem to be strong enough to contain everything), sweet potatoes, black beans, red onions, grated cheese, avocado, and cilantro according to amounts you like.
  • Squeeze lime juice over the top of everything.
  • Top with either sriracha or other hot sauce, if desired.
