Small Batch Funfetti Cupcakes
These funfetti cupcakes are moist, and delicious vanilla cupcakes, loaded with sprinkles and topped with a buttercream icing. The recipe makes just a small batch, 4 cupcakes for when you need something sweet, without a lot of extra.

- 3 TBS granulated sugar
- 2 TBS unsalted butter (softened)
- 1 egg white
- 2 TBS milk
- 1/4 tsp vanilla extract
- 6 TBS all purpose flour
- 1/2 tsp baking powder
- 1 pinch salt
- 1 TBS jimmie sprinkles
For the Funfetti Frosting:
- 2 TBS unsalted butter (softened)
- 1/2-3/4 cup powdered sugar
- 1 TBS heavy cream
- 1/4 tsp vanilla extract
- 1 TBS jimmie sprinkles (plus more for decorating)
Preheat the oven to 350 degrees Fahrenheit. Line a muffin pan with 4 paper liners.
In a medium sized bowl whisk together the sugar and butter until well combined.
Add in the egg white, milk, and vanilla extract and stir until just combined.
Sprinkle in the flour, baking powder, salt and sprinkles and stir it together until just combined.
Scoop the batter evenly into the prepared cupcake liners.
Bake the cupcakes for 15-20 minutes, or until a toothpick comes out clean.
Cool completely before frosting.
For the Funfetti Frosting:
Add the butter to a small bowl and beat it until it is smooth.
Add in the powdered sugar, cream, and vanilla extract and beat together for a couple of minutes until light and fluffy. Add a little bit more cream or powdered sugar as needed for the correct consistency.
Fold in the sprinkles.
Scoop the frosting into a piping bag with a piping tip, and pipe the frosting onto the cupcakes, or spread it on with a knife.
Spread additional sprinkles evenly over the top of the cupcakes.
