For the Spinach Cranberry Salad:
- 6 cups Baby Spinach
- 1 Gala Apple Thinly sliced
- 1/2 cup Dried Cranberries
- 1/2 cup Candied Pecans
- 1/3 cup Crumbled Feta
- 1/4 cup Thinly sliced Red Onion
For the Apple Cider Vinaigrette:
- 6 TBS Apple Cider Vinegar
- 6 TBS Olive Oil
- 1 TBS fresh squeezed lemon juice
- 1 TBS honey
- 1 tsp Minced Garlic
- 1 tsp Dijon Mustard
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
For the Spinach Cranberry Salad:
Prepare all the ingredients for the salad, by rinsing the spinach, slicing the apples, etc.
Add the salad ingredients to a large bowl.
For the Apple Cider Vinaigrette:
Add all the ingredients to a small bowl and whisk them together until combined. (You can also combine everything in a jar with a lid and shake until combined).
Drizzle some of the dressing over the salad and toss it together.
- Coat the Apples in Lemon Water - If you aren't eating the salad immediately, add the sliced apples to a bowl with lemon juice, and some cold water and let them sit for about 5 minutes, stirring occasionally to coat all the sides of the apples. Pat them with paper towels to dry, and serve on the salad.
