Spinach Cranberry Salad

This Spinach Cranberry and Apple Salad is such a refreshing, and simple salad perfect for any season or occasion. It's a delicious option for a light lunch, or an easy side dish for dinner.

Ingredients

For the Spinach Cranberry Salad:

  • 6 cups Baby Spinach
  • 1 Gala Apple Thinly sliced
  • 1/2 cup Dried Cranberries
  • 1/2 cup Candied Pecans
  • 1/3 cup Crumbled Feta
  • 1/4 cup Thinly sliced Red Onion

For the Apple Cider Vinaigrette:

  • 6 TBS Apple Cider Vinegar
  • 6 TBS Olive Oil
  • 1 TBS fresh squeezed lemon juice
  • 1 TBS honey
  • 1 tsp Minced Garlic
  • 1 tsp Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

For the Spinach Cranberry Salad:

  • Prepare all the ingredients for the salad, by rinsing the spinach, slicing the apples, etc.
  • Add the salad ingredients to a large bowl.

For the Apple Cider Vinaigrette:

  • Add all the ingredients to a small bowl and whisk them together until combined. (You can also combine everything in a jar with a lid and shake until combined).
  • Drizzle some of the dressing over the salad and toss it together.

Notes

  • Coat the Apples in Lemon Water - If you aren't eating the salad immediately, add the sliced apples to a bowl with lemon juice, and some cold water and let them sit for about 5 minutes, stirring occasionally to coat all the sides of the apples. Pat them with paper towels to dry, and serve on the salad.
