For the Salmon:
- 4 salmon fillets
- 2 TBS olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Tomato Basil Relish:
- 3-4 large roma tomatoes (diced)
- 2 TBS finely chopped red onion
- 2 TBS chopped fresh basil
- 1 TBS olive oil
- 1/2 TBS fresh squeezed lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 TBS balsamic glaze
For the Salmon:
Preheat the oven to 400 F.
Drizzle each salmon fillet with olive oil. Then sprinkle with salt and pepper on all sides.
Place the salmon, skin side down, on a baking sheet. Cook for 12 to 15 minutes, or until it reaches an internal temperature of 145 F.
For the Tomato Basil Relish:
While the salmon is cooking, add the tomatoes, red onion, basil, olive oil, lemon juice, salt and pepper to a small bowl. Stir them together, and set aside.
Remove the salmon from the baking sheet. Top each portion with tomato mixture, and drizzle with balsamic glaze. Serve hot.
- Adjust for preference: Adjust the amount of garlic and basil according to your preferences.
- Leave the skin on: The skin will help keep the salmon juicy while it is cooking. It should easily peel off with each bite when finished cooking, so you don't have to worry about eating it.
- Don't overcook the salmon: The salmon should be cooked to 135 F for medium doneness, or 145 F if you want it cooked all the way through. Do not cook it over that temperature or it will start to dry out.
