These brownie trifle cups are delicious individual trifles with layers of chocolate pudding, brownie bites, whipped cream, and raspberries!
These brownie trifles are so easy to make with only just a few ingredients, and take just a few minutes of time to put together.
Valentine’s Day often ends up a little more low key with kids around, but we still try and make the day special with a fun dinner like heart shaped pizzas, and a special dessert, that every one will love. These brownie trifles are just that, something that Nate and I, and our three kiddos will readily and happily gobble up after dinner.
This brownie trifle is a great make ahead dessert because it can be made a few hours, or the night before enjoying it. It just depends how soft you like your brownies in the trifle, as they will start to soften more the longer they sit in the trifle, as they soak up some of the moisture from the pudding.
If you don’t want your brownies too soft but still want to prepare your trifle ahead of time, you can prepare each of the layers the day before, but not assemble the trifle until you’re ready or almost ready to eat them.
How to make Brownie Trifles?
Start by making and preparing each of your ingredients. You can decide if you want to make them each homemade or semi homemade, or buy them from the store to make it even easier. So you’ll need brownies, chocolate pudding, whipped cream, and raspberries.
For the brownie layer you can use brownies bought from a store or your favorite bakery, brownies made from a brownie mix, or totally homemade brownies. I decided to go with a boxed mix, and the instructions list that. Line a baking pan with parchment paper for easy removal and prepare the box mix according to the package directions. Bake the brownies until a toothpick comes out clean, then let them totally cool before chopping them up into bite sized pieces.
For the whipped cream layer you can buy cool whip, or reddi-whip from the store, or make homemade. For the best flavor make your own whipped cream with heavy whipping cream. Whip the heavy cream in a stand mixer, or a large bowl with a hand mixer, or other electric mixer until stiff peaks for, then add in some sugar and vanilla extract, whip it again.
For the pudding layer you can buy premade pudding cups, instant pudding from a box (this is what I did), or make a homemade chocolate pudding. For the instant pudding, I mixed the pudding with cold milk according to the directions on the box.
For the raspberry layer, this is the easy part, rinse the raspberries and let them dry completely before using in the trifle layers.
For assembling the trifle you’ll first start with a layer of brownies, add a layer to the bottom of each of the individual cups, then use a layer of chocolate pudding, then a couple spoonfuls of whipped cream for that layer, then a few raspberries. Repeat a second layer of each, then top with a mint sprig for color.
I used these small 8oz cups I found on amazon. Any small cup will work, I recommend using 8 to 10 oz cups.
Tips for making a Brownie Trifle:
- Instead of making individual brownie trifles, you can also make one giant trifle for everyone to dig into. It looks more impressive before being cut into than the individual trifles, but is a bit messier as you serve it up. If you are using a large trifle dish you will probably be able to do 3 layers of each ingredient, depending on how thick you make each layer.
- Instead of chocolate pudding, choose your favorite other flavor of pudding, I think white chocolate, or cheesecake, or vanilla puddings would be especially delicious.
- Instead of raspberries, you could try a mix of berries, or a different berry that you prefer alone. I love the combination of blackberries and raspberries, or raspberries and sliced strawberries.

Brownie Trifle Cups
Ingredients
For the Brownie Layer:
- 18 oz brownie mix
- 3 eggs
- 1/2 cup oil
For the Chocolate Pudding Layer:
- 3.9 oz instant chocolate pudding
- 2 cups cold milk
For the Whipped Cream Layer:
- 1 1/3 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
For the Assembly:
- 12 oz raspberries
- mint sprigs (optional)
- 8 small 8 oz cups

For the Brownie Layer:
- Preheat the oven. Line a 9x13 pan with parchment paper.
- Prepare brownie mix with eggs, oil, and water, as listed on the box.
- Pour the brownie batter into the prepared baking pan, and baking the brownies according to the package directions, or until a toothpick comes out clean.
- Set aside to cool completely.
- Cut half the brownies out of the pan (set aside the other half for another time, or just to enjoy eating on their own) and cut the brownies into small 1/2 inch sized pieces. Set aside till needed.
For the Chocolate Pudding Layer:
- In a medium sized bowl stir together the chocolate pudding mix and milk according to the box directions (mine said 2 minutes). Set aside till needed.
For the Whipped Cream Layer:
- Add the whipped cream to a medium sized bowl. Whip up the whipped cream with a hand mixer, or stand mixer at high speed until stiff peaks form.
- Add in the powdered sugar and vanilla extract, and whip again until combined.
For Assembling the Trifle Cups:
- Add one layer of brownies to the bottom of a cup (about 4 or 5 pieces).
- Spoon your chocolate pudding into a ziptop bag and snip one of the corners off.
- Squeeze a layer of chocolate pudding on top of the brownies.
- Spoon the whipped cream into a ziptop bag and snip one of the corners off.
- Squeeze a layer of whipped cream on top of the pudding.
- Add a layer of raspberries on top of the whipped cream. I added 5 raspberries to this layer.
- Repeat with another layer of brownies (this time probably 8 or 9 brownie pieces), another layer of pudding and whipped cream.
- Top the cup with about 3 or 4 raspberries and a mint sprig, if desired.
- Repeat with additional cups.
- Enjoy immediately, or place the cups in the fridge for a couple hours, up to overnight for the brownies to soften and the flavors to meddle a bit more.
