Being a mom can be completely exhausting. From the not sleeping through the night, to the running around chasing your toddler, to putting up with tantrums, to the worrying. Most of all the worrying about whether you’re doing enough to help them learn, worrying about if you’re child is on the right track for talking, walking, learning to do puzzles, worrying about if they’re eating enough, if you’re feeding them good healthy food – don’t even let me think about the future when my son might get hurt, or meet mean kids, or have a hard time in class, or who knows what. And he’s only 15 months old!

Don’t get me wrong, being a mother, along with the worrying and exhaustion is so rewarding. Having your little one run up and give you a hug, and kiss. Watching him learn how to wave, and blink, and say mama. Oh my goodness, I just love my little boy to pieces.
And that’s why I want to keep him healthy – and keep him from getting hurt. These peanut butter, banana and oat blender muffins are a perfect thing for me to make for him. He gobbles them down, but they’re full of all healthy ingredients – no flour, no refined sugar, no oil – instead we use oats, a little honey, and greek yogurt. We’ve also got eggs, bananas, peanut butter, a little salt, and a little baking soda and baking powder. Just throw everything into the blender and mix it all up till mostly smooth. You might also love our banana cinnamon oatmeal muffins!
You can make the muffins regular sized or mini. And you can add a few chocolate chips to make them a little sweeter, and tastier for those tiny mouths.
And sometimes I like to drizzle a little extra honey over the top of mine when eating them too.
Peanut Butter, Banana and Oat Blender Muffins
Ingredients
- 2 cups old fashioned oats
- 1/2 cup peanut butter
- 2 ripe bananas
- 2 eggs
- 1/2 cup plain Greek yogurt (or vanilla)
- 1/4 cup honey
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips or nuts (optional)
Instructions
- Preheat oven to 400 degrees.
- Place all ingredients (except chocolate chips or nuts) into a blender and mix until smooth.
- Mix in chocolate chips or nuts if desired
- Pour batter into a muffin tin lines with muffin liners, or grease muffin tin (regular or mini)well with nonstick spray. Fill 3/4 full.
- Bake for 7-8 minutes for mini muffins, and 9-12 for regular muffins.

Last week I took Colby to the park to feed some ducks and we had so much fun, then he started to go into a shed of gardening tools that the maintenance crew uses at the park. I grabbed his arm to pull him out and apparently in the process I dislocated it. He’s normally a very happy boy, so when walking around the pond I couldn’t figure out what was wrong, but if I held him without moving him he seemed okay. We went home and he fell asleep in the car so I figured maybe he had just been really tired, but then getting him out of the car he screamed, and I gave him a bottle and bumped his little left arm and his little whimper just broke my heart. I looked online to read about dislocations, and his doctor was able to see him and pop it back in quickly. But I just about cried watching my little man so sad and in pain like that. Momma’s are supposed to talk care of their babies.

I had a little more batter after filling my 12 muffin tin. I didn’t want to overfill them so I put the leftover bit in a small ramekin and microwaved for 90 seconds at 60%. It was dense, chewy and delicious. Yum!

My almost 2 year old loved these. I mixed all by hand but n one bowl ( wet ingredients and bananas first) then I ground the oats only in my mini food processor and stirred them in along with the other dry ingredients. The banana was a little chunky, but not too bad. They baked up well in silicone pans as mini mini (1TBS) muffins. Thanks for sharing!

Dont stress about the dislocation- i pulled my little man up by his arms onto my lap for a cuddle and his elbow dislocated- that was 3 years ago and its never happened since and no lasting effects either apparently it happens often 😊

Haha, thanks so much. He’s 5 now and thankfully grown out of it, though it did happen several times, I eventually learned how to pop it back in place myself so it was fixed quicker and we could avoid an urgent care bill. 🙂

I discovered this about oat substitutes from a LiveStrong article –
“You can replace the oats in an oatmeal cookie recipe with an equal amount of ground flax, rice bran, quinoa flakes or chia seeds. Ground flax has very little flavor and is likely to produce cookies that taste similar to the recipe with oats, with a slightly grittier texture. Rice bran introduces an earthy tone to the cookies, but they still taste sweet with a chewy consistency. Quinoa flakes have a slightly nutty flavor that can enhance the natural sweetness of oatmeal cookies and give them a similar texture to oats. Chia seeds have a hardly-noticeable nutty flavor and create a more crumbly oatmeal cookie.”
I don’t know how they will do in muffins but muffins are baked similar to cookies. Let me know if you try it.

I’ve been sourcing for muffin recipes for the past few weeks and making batches for my 11mo. This is the first recipe where my muffins actually beautifully domed and remained puffy! The others would rise in the oven and then collapse into a miserable mass. It’s so tasty too! I made half with Choc chips, the other with flax and chia seeds. Yummy! Definitely baking this again. I’m hesitant to give calorie estimates since the ingredients you use may be different than what I use, as well as I’m not a nutritionist. I recommend you plug in your ingredients into a calorie counter like My Fitness Pal to get a more accurate estimate for you. However I believe they’re about 110 each for 1 regular muffin.

Ah! I wish I had read the comment about the order! I followed the order listed and put the oats in my vitamix first. What. A. Disaster! It shorted my blender 3 times!!! Pls pls consider putting a comment about this! I’m looking forward to what they taste like cause it was quite the ordeal to make them!

I put the ingredients into my blender as listed – which was a mistake. Immediately I turned it on, the oats compacted at the bottom of my blender (Vitamix) and caused a whoosh of smoke and a lingering smell of burning rubber. After praying over my blender, that it would survive(!), I scooped everything out and mixed it by hand. Next time I’ll load up the blender by adding small amounts of oats in with the wet ingredients.
I’ve just pulled them out of the oven, and they’re looking good and smelling great! Can’t wait to try them.

Sorry that it didnt work in your blender! You actually want to oats to turn into an oat flour which is why mixing by hand alone wont work. But glad you salvaged it, hope you love them!

Thanks Aimee. The oats were mostly ground by the time I turned it off (speedy, over eager Vitamix!). They taste good, but unfortunately, the bottom and sides stuck to my paper liners. Not sure whether that had to do with my blender mishap. I’ll try dusting the liners with a little flour next time.

My trick…pulse the oats first without the other ingredients to get the flour like consistency. Dump out into a cup and then mix in with the other ingredients in the recipe!

These are wonderful!! And they come together so quickly. They made one mini muffin pan and one regular muffin pan. I’ve made two batches in the past week and everyone loves them (husband, 18 month-old daughter, 4 year old, neighbours, daycare kids, etc!). For the second batch, I added the chopped walnuts and chopped 70% dark chocolate. I’ve also used frozen bananas both times (barely defrosted – maybe out of the freezer for half an hour or less) and they’ve turned out great!! Thank you for sharing!
