Caramel apple blondies are a delicious brown sugar blondie stuffed full of apple pieces and lots of gooey caramel for a perfect fall dessert!
Blondies are one of my favorite treats with their rich brown sugar flavor throughout. I just knew I had to try a fall version, and these caramel apple blondies did not disappoint.
These caramel apple blondies are packed full of cinnamon, soft apple pieces and ooey gooey caramel in the middle. They are bundled up with the perfect fall flavors, and are great enjoyed no matter what season. Even if you’re dreaming of fall, but the weather is still a little hot, and the leaves aren’t quite changing colors.
There is extra caramel in these bars to make them extra gooey and chewy and delicious. They’re amazing on their own or even better as a warm dessert, zapped in the microwave for a few seconds and topped with ice cream and a drizzle of extra caramel for good measure.

- Butter- adds flavor and makes it delicious
- Brown sugar
- Egg- the fresher the better
- Vanilla extract
- Salt
- Apples- fresh apples will also make this even better
- Flour
- Soft caramels
- Cinnamon
- Whole milk
How to make Caramel Apple Blondies?
- Preheat your oven to 350 degrees. Having your oven preheated while you prepare the recipe is important so that the oven is evenly heated and ready to go once the caramel apple blondies are ready to bake.
- Line a 8×8 pan with parchment paper. Try and have the parchment paper lining flat on the bottom so that the blondies will be easy to remove once the baking is completed.
- In a medium bowl or large bowl, cream together the butter and brown sugar. Beat 2 minutes until light in color. Feel free to use an electric mixer for this step to make it easier on your hands and you can take a break while the 2 minute timer counts down.
- Add in egg and vanilla extract and stir until combined.
- Pour in the salt, cinnamon, and flour and stir to combine. Make sure that everything looks evenly mixed and that there are no chunks in the mix before moving onto the next step. This is important to make sure you have an even mix and will allow the blondies to bake evenly. The dry ingredients need to be mixed in evenly with the wet ingredients used so far.
- Fold in the apple chunks. Having sweet apples is important- the kind of apples you choose is up to you but the sweeter the better.
- Scoop half of the batter into the pan and flatten.
- Add the caramels and milk to a small sauce pan over medium heat. Heat until caramels are fully melted and creamy. Stir occasionally to help the milk and caramel to mix.
- Pour melted caramel over the dough.
- Drop remaining dough over the caramel evenly. This layering will be how you have a delicious apple flavor mixed with warm spices and a gooey texture of melted caramel in between it all.
- Bake in the preheated oven for about 30 minutes, until a toothpick can be inserted and comes out clean.
- Sprinkle with sea salt and allow to cool before slicing and serving.
- Serve warm with a scoop of vanilla ice cream and extra caramel syrup if desired. Can also be served room temperature if unable to serve warm. Cover with plastic wrap or in an airtight container for storage. Enjoy your caramel chewy apple blondies as this becomes one of your favorite recipes!
Caramel Apple Blondies Tips
- Try using granny smith apples for your apples as they are a good mix of sweetness and texture.
- The apple flavors will be even better if you are able to grab some local apples during apple season and use them in this recipe!
- You can take this perfect dessert recipe up a notch by adding some extra goodies on top like sprinkling coconut sugar, adding butterscotch chips, sprinkling some cinnamon on top, a little bit of pure maple syrup, or even drizzling extra caramel on top.
- When having them the next day, try throwing a blondie or two in the microwave for 20-30 seconds to warm them up again before throwing some ice cream on top. This apple blondies recipe stays good when properly stored- good news if you are able to not eat all of them on the first day.
- If you have any leftover chopped apples toss them in some lemon juice and store them as a topping for these apple blondies. It is especially good to warm these blondies up, throw a scoop of ice cream on top, sprinkle some of the leftover apple chunks on top, and drizzle with caramel.

Ingredients
- 1/2 cup butter (1 Stick), softened
- 1 cup brown sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup flour
- 1 1/2 apples (peeled, and diced)
- 8 oz soft caramels (about 1 1/2 cups)
- 1 TBS whole milk
Instructions
