Sometimes Nate gets mad at me for making a whole batch of cookies, I try to only eat a couple cookies (unless its my cheat day) and then we’re left with a couple dozen cookies that need to be eaten. Although Nate’s coworkers love sharing in the goodies I make, that make it to his work, sometimes the cookies don’t make it there because he eats them. Or, lets be honest, I eat them.
I found this recipe on pinterest and it is the perfect solution. This recipe makes either two giant chocolate chip cookies, or 4 normal sized cookies. And they are amazing too! Its pretty much the same ratios as my favorite chocolate chip cookie recipe, but instead of making about 2 1/2 dozen cookies this recipe makes just 4 cookies.
(Its great to use a toaster oven for this recipe if you have one because then you don’t have to heat your whole oven for just 4 cookies, or throw these into your oven after you’ve made dinner in there and the oven is already hot)
These cookies have the perfect chocolate chip cookie texture, with a slightly crispy outside, soft and chewy middle and they are loaded with chocolate chips through out. (The best kind is definitely Guittard Milk Chocolate Chips! — I tend to like a ratio of more cookie to chocolate unless I am using these chocolate chips, then I am happy to stuff my cookie full of their creamy milk chocolatey goodness.)
This recipe is perfect for sharing with a friend, your honey bunch, or just for eating yourself. Because lets be honest, there are plenty of days where I can eat 4 cookies on my own! Each cookie is about 147 calories, give or take a few calories depending on brands that you use – especially chocolate chip brands, or if you sneak a few extra chocolate chips on top of your cookie dough as its baking – because it gives it that perfect chocolatey top!
Perfect enjoyed with a big glass of milk!
Chocolate Chip Cookies for Two
Ingredients
- 2 TBS butter (softened)
- 2 TBS brown sugar
- 1 TBS sugar
- 1/4 tsp vanilla
- 1 large egg yolk***
- 1/4 tsp baking soda
- 1/4 tsp salt
- 4-6 TBS flour **
- 1/4 cup chocolate chips
Instructions
- Preheat your oven (or toaster oven) to 350 degrees.
- Blend your softened butter, brown sugar and white sugar together in a small bowl.
- Add the egg yolk and vanilla and mix again till combined.
- Add your baking soda, salt and flour to the bowl and stir till combined. Start with 4 tablespoons of flour and add more as needed.
- Stir in chocolate chips.
- Form cookie dough into 2 large or 4 normal sized balls and place on a pre sprayed baking sheet.
- Bake for 8-9 minutes or until edges are golden. (or about 10-12 for large cookies)
- Remove from oven and drop the baking sheet on the counter to give the cookies that perfect wrinkle.

I cannot talk and cook at the same time! I accidentally added the egg white and not the yolk. I also used Truvia Zero Sugar, Truvia Brown Sugar and Smart Balance. They turned out great! I have tweeked your sugar cookies for two in the past as well with no sugar. I am diabetic and these have been a life-saver for my sweet tooth moments

Really good and perfect for two! FYI, if you use a whole egg (I didn’t want to waste the egg white and took a risk) it will make a more cakey, almost muffin-type consistency.

Yes, it’s a small batch cookie recipe so you can’t use a whole egg, just about 1 Tablespoon of egg, which is equivalent to a yolk

I’m sorry there is no milk, if you look on the next line it says chocolate chips. You add 1/4 cup milk chocolate chips. You can use dark chocolate as well so I edited the recipe to just say chocolate chips. It only splits it like this on mobile.

I loved this recipe! I live with two other people who are not cookie fanatics by any means and it’s tough to find recipes that make an extra small batch, so thank you! This was also super easy to make as it only needed one bowl. And as for the cookies themselves, they were delicious! I made my dough balls a little bit smaller but I was still able to make 5 medium sized cookies. I also used dark chocolate chips instead of milk chocolate chips because those were all I had in my pantry. But let me tell you, they came out wonderfully! Mmm, warm, soft, chocolately perfection! Would definitely make again.

They taste great… but look nothing like the picture! Mine didn’t flatten out at all and kind of look like biscuits, and I had to cook them for 15 min to get them cooked. I’m wondering what I did wrong!

Did you separate the dough into 4 cookies or just 2? With my other cookies for 2 I slightly flatten the cookie before baking, but these have been my flattest of all. I know one recipe I saw suggested banging the pan against your countertop right after taking them out of the oven. Glad they still tasted good for you!

I don’t think you did anything wrong. I’ve been making chocolate chip cookies for 45 years. If you add milk and then more flour because The batter is then too thin you cannot end up with chewy crispy cookies, you end up with muffins! Not tasty. Cake like texture. No one would eat them.🙁

I would start with the smaller amount of flour since maybe different altitudes could affect that, also we all scoop flour different so my guess is that is why the cookies didn’t flatten!

This is perfect! For so long I have made a whole batch and rolled them into balls. Then I would bake what I wanted and freeze the rest. This would work but I have no self control. I would sneak into the freezer and eat a ball of cookie dough…or two. I like only making what you are going to eat. Less tempting!
