Crockpot creamy chicken and broccoli over rice; easy, delicious, and ready for dinner when you are.
Creamy Chicken and Broccoli over Rice
Ingredients
- 3 chicken breasts
- 1 - 10 oz can cheddar cheese soup
- 1 - 10 oz can cream of chicken soup
- 1 1/2 cups chicken broth
- 1 tsp salt
- 1 tsp cajun seasoning
- 1/4 tsp garlic salt
- 1 cup sour cream
- 2 cups broccoli
Instructions
- Put everything except sour cream and broccoli in the crock pot.
- Cook on low for 6 hours or on high for 4.
- Shred the chicken breasts with two forks.
- In a rice cooker (or however you like) cook about 4 cups of rice.
- Meanwhile, add broccoli to the crock pot and stir in.
- Cook for another 30 minutes.
- When done cooking, stir in sour cream with the crock pot mixture.
- Enjoy over a bowl of rice.
This was a perfect meal to warm us up on a chilly autumn day. We had enough creamy chicken mixture that we froze half of it and each enjoyed a BIG bowl.

When cooking the broccoli for 30 minutes, should I cook it on low or high?

I cooked the entire meal on low so I would cook the broccoli on low for 30 minutes, but if you want it done just a little bit quicker, I would guess on high for about 20 minutes would be sufficient.

Saw this late today, so I made it stove top: boiled the chicken, then added a bag of rice to the same water. Shredded the chicken and then dumped out the water and made it as you instructed; still a one-pot meal… Very good, super easy and comforting. Thanks!

I am sure this is a dumb question but the creamy chicken and cheddar soups I find are condensed. Do I add just the condensed soup or do I add the extra can of water to make the soup?

Just add the soup, it thins out in the crockpot with everything else added.

Do you want to use Velveeta instead of the cheese soup? I honestly have no idea, its probably a little thicker than the soup is, but I haven’t cooked with it much. I think it would work though. Let me know if you decide to try it out!

I think it will change the texture without the soup, but might not change it too much, it might just leave you with less. I would probably just add the cheese at the last minute or sprinkle it on top of each dish.

I shred the chicken after its cooked for 4 hours. It won’t shred nicely or be cooked through before then. I hope you guys like it! Its one of our favorites!

I plan on trying this recipe tomorrow and I was curious as to why is it necessary to add the sour cream later. Also, do you think it would still taste good to use quinoa as an alternative to rice?

Ive heard that the sour cream will curdle with the heat, but ive never tried it though so im not really sure what happens.. And I’ve never tried quinoa, but if you normally use it like you do rice then im sure it would be good. Pasta noodles would probably be good too, its mostly just a carrier for the cheesy goodness.

I don’t think you really notice the cajun seasoning at all, I would suggest using seasoning salt instead, our just leaving it out. Let me know what you think!

I have only made this in the crockpot, but im sure you could make something similar other ways. I know some people make a casserole out of it by combining everything and baking it. I would suggest precooking the chixken for that, and not adding chicken broth to the mixture. Good luck!

Just as I was about to make this I discovered my old roommate took our crockpot with her. I just heated this up on the stove at a low temp (attempting to simulate a corckpot), to be fair, it was only on the stove for about two hours and it is ready. I also didn’t add the salt, as canned soups have so much sodium. LOVE IT!

A substitute for chicken broth huh, well of course you can create your own chicken broth with bouillon and water, which is actually what I usually do, just tossing both in with the mix. You could also use vegetable broth. And if you’re desperate enough to make it without you can use plain water.

I’m sorry I didn’t respond to this yesterday. Personally I think usually chicken goes best with creamy stuff, but you could definitely try ground beef too, I would brown it in a pan before putting it in the crock pot though. Let me know how it goes!

I did use the frozen chicken breasts. They seemed a bit tougher to shred but I was able to shred them. I actually pulled them out and shredded then placed them back in the crock pot. I will say though that the consistency seemed a little thinner than expected and thought that since it was frozen chicken, that could have contributed but after cooking for a bit longer, it thickened up. This recipe was so good!!!!

I think it would be okay, I would just shorten your time since the chicken doesn’t need to be fully cooked, and I personally often used frozen raw chicken breasts in things like this. I don’t really know if the chicken would shred, but I think it would taste just as good if you served everyone with a whole chicken breasts or chicken strips instead. Or you could just cut the chicken in to pieces as well. Let me know if you try it out!

I used fresh broccoli and just added it to the crock pot raw. But you could definitely use frozen, I would just steam it before hand and add it at the last step with the sour cream.
