You already know I’m obsessed with lemon curd. You know what else I’m obsessed with? These lemon curd and berry parfaits. With layers of vanilla yogurt, tangy lemon curd, Nature Valley Granola, and fresh berries — these parfaits are perfection for breakfast, or an easy snack.

So this parfait is a perfect combination of sweet and tangy, creamy and crunchy. I’ve always love Nature Valley’s granola bars, and now they have granola crunch cereal that is perfect for these parfaits!
There are big pieces of granola in there, like its broken up Nature Valley Crunchy Granola Bars, so in a jiffy if you don’t have the granola cereal you can totally break up some granola bars instead.
And the lemon curd adds such a refreshing, tanginess to the traditional parfait. It’s a perfect pairing with the sweet fresh berries.
Lemon Curd and Berry Parfaits
Ingredients
- 1 cup vanilla yogurt
- 1 cup lemon curd
- 1 cup Nature Valley Granola Crunch
- 1 cup fresh strawberries (blueberries and raspberries) (strawberries chopped)
Instructions
- In a cup, layer first 2 TBS vanilla, then about 2 TBS lemon curd, then a handful of granola and a handful of berries.
- Repeat one additional layer of each.
- Enjoy.

Oh this is such a pretty parfait! I love lemon curd too, but have never thought to use it in a parfait before. Such a great idea and sounds delicious!
