I am so excited today. I’m excited because today I might be sharing with you the best homemade ice cream ever made. Now, I don’t take this thought lightly but this strawberry cheesecake ice cream is incredible. I don’t take this lightly, but of the dozens of homemade ice creams I have made, and even more I have eaten, I think this might be my favorite yet.
This ice cream is inspired by Ben and Jerry’s strawberry cheesecake ice cream. I’ve got two go to flavors when grabbing a pint of Ben and Jerry’s ice cream, strawberry cheesecake and half baked.
Although I haven’t eaten them side by side, I dare say that my homemade strawberry cheesecake ice cream is as good (or even better) than Ben and Jerry’s. If you’ve never had the flavor, or swear by it like I do – I promise you’ll love this homemade version.
I mean, what could be better than a homemade cheesecake based ice cream, with straight up cream cheese in the ice cream, swirled with a sweet strawberry sauce and a buttery graham cracker crust. Its deliciousness and sweet flavor in every single bite.
It is like you took the best strawberry cheesecake and turned it into a delicious bowl of creamy ice cream instead.

You’ll want to eat this ice cream every day, all year long, no matter what season it is. Its great for a twist on a Valentine dessert, or to cool down with on a hot day.
This recipe does require an ice cream maker, so make sure to put your freezer bowl in the freezer at least 24 hours in advanced so that it is completely frozen.

Strawberry Swirled Cheesecake Ice Cream
Ingredients
For the Strawberry Swirl:
- 1 1/2 cups chopped strawberries
- 1/4 cup sugar
- 1/2 TBS corn starch
For the Graham Cracker Crust Swirl:
- 4 graham cracker cookies
- 1/2 TBS sugar
- 2 TBS melted butter
For the Cheesecake Ice Cream:
- 8 oz cream cheese (softened)
- 1 cup white sugar
- 2 cups heavy cream
- 1 cup whole milk

For the Strawberry Swirl:
- Blend up the strawberries until smooth.
- Pour strawberry puree, sugar and cornstarch into a medium sized sauce pan and cook up for a few minutes until a thick sauce is made.
- Pour into a bowl and refrigerate for 1 hour.
For the Graham Cracker Crust:
- Crush your graham crackers into a fine crumb.
- Combine the graham cracker crumbs, sugar and melted butter. Set aside till needed.
For the Cheesecake Ice Cream:
- Whisk together your cream cheese and your sugar until smooth.
- Add in the heavy cream and milk and whisk until mostly combined. **
- Pour mixture into your prepared ice cream mixer. Allow to churn according to manufactures instructions.
- Scoop 1/3 of the ice cream mixture into a 3QT pan (a bread pan is perfect for this)
- Scoop 1/3 of the strawberry puree, and sprinkle 1/3 of the graham cracker crumbs over the top of the ice cream.
- Swirl together with a knife. (Swirl well, any thick strawberry sauce areas will become a bit icy)
- Repeat with the second third, and final third of the ice cream, sauce and graham crackers.
- Cover with plastic wrap and place in your freezer to harden for 6 hours, up to overnight.

So amazing! This was the first ice cream recipe that I’ve made that we actually smooth and not ice chuncky. I had the unchurned base sitting in the fridge for a few hours then put it in the ice cream machine and it was amazing. However I did have to churn it for 35 minutes instead of 25 like normal but that was all!

Wow! This recipe is amazing. The ice cream came out perfectly and was so delicious! It was even better than Coldstone l’a cheesecake ice cream. At first I questioned making the strawberries a sauce but it is perfect.
Using the cuisinant ice cream maker, I mixed the refrigerated cream and milk with the room temperature cream cheese and sugar and put it straight into the machine to churn. If took about 35 minutes to get to the thick consistency shown in the video. I then added the strawberry sauce (I made it a thick jam with chunky pieces) and graham cracker crust to the ice cream while the machine was going and it mixed perfectly. I let it mix until it was a little over half pink and half white.

I’d make sure it’s a thin jam that can drip down a spoon, definitely not a jelly consistency.

I LOVED this recipe. turned out PERFECT. I used frozen blueberries and strawberries, added a hint of lemon.
I also used an ice cream maker. I did all the ice cream part, towards the end, when the ice cream is thicker in the machine, that’s when I add the Graham cracker bits. Then when I’m pouring it into a container, I layer and slightly mix by hand, the fruit into the ice cream and continue layering till all used up. It reminds me of Coldstone Blueberry Cheesecake Ice Cream. SUPER YUM great recipe

So my mixer didn’t want to churn this (I dont think I smoothed out the cream cheese enough) so, I ended up having to whip this in my icw-cold bowl using a plastic spatula, a whisk, and an hand held mixer.
That hard work was so worth it, this recipe is deeeelicious! I plan on adding more strawberry swirls.

Just made the ice cream base for my red velvet ice cream cake! I snuck a taste (haven’t pieced my cake together) and it was delicious. Not too sweet – and very easy! I added 1/2 tsp of vanilla extract. I made this in my 1.5 qt ice cream maker. At 20 minutes it was almost spilling over the top but it was done before it churned over!

This icecream is the bomb!!! I made it today, the only thing I did different was add 1/2tsp of vanilla to the cream and a little cinnamon to the Graham cracker crust. I will definitely make this again. Thanks for the recipe. Oh and I had to churn a little over half the mixture at a time my icecream bowl is only 1.5 quart.

I came across this recipe a year ago and I can’t count how many times I have made it! I make ice cream every week (my husband is addicted). I use the cream cheese ice cream base from your recipe and make all sorts of variations. Our current favourite is the cheesecake ice cream base with brownies, chocolate chips, fudge sauce and graham cracker crust. It is a heavenly combo!

Once the ice cream is made, layer it in a pan just like I instruct here.

I have made this three times so far. I like it more and more each time I make it. Next time, I’m going to put vanilla wafers in it and try cherries in it for cherry cheesecake ice cream for a different taste.

In the graham mix is calls for just “sugar”, but for the ice cream your recipe says “white sugar”. For the ice cream , are you saying to use white icing sugar?

I was just wondering most ice cream maker say you’re supposed to chill that ice cream mix for at least three hours overnight preferably before putting it into the ice cream maker is that not necessary with this recipe ?

Since this isn’t a custard based ice cream, (meaning it doesn’t get heated up cause of eggs), the ice cream mix is room temperature and is fine going straight into the mixer. Also because you’ll continue to freeze the ice cream after it mixes in the ice cream maker (to add the layers) so it’s okay if the ice cream is soft set.

It makes about 6 cups of ice cream. Frozen strawberries should work fine since you are cooking them down. They may take longer to cook.
