These berries and cream crepes are light and simple crepes stuffed full of a creamy, cheesecake like filling and juicy berries. Perfect for breakfast or brunch!

Ingredients:

For the Crepes: - 1 cup flour - 1/2 cup milk - 1/2 cup water - 3 eggs - 2 TBS melted butter - 2 TBS granulated sugar - 1 tsp vanilla  - 1/2 tsp salt For the Cream Cheese Filling: - 8 oz cream cheese - 1 cup granulated sugar - 1 tsp vanilla - 1 cup heavy cream For Berry Sauce: - 2 cups mixed berries - 1/2 cup granulated sugar - 1 TBS cornstarch

Add all the ingredients for your crepes to a blender, and blend the mixture up until smooth.

Add about 1/4 cup of the crepe batter to a greased large skillet, and spread it around the pan. Cook until the crepe starts to bubble a little on top and the bottom is crisp. Flip it over to cook the other side.

Beat the cream cheese, sugar and vanilla in a large bowl. Then fold it together with whipped cream to make a creamy and fluffy mixture.

Mix the berries, sugar, and cornstarch in a pot and cook them together until the juices release and you have a nice saucy mixture.

Take one crepe, and fill it with a few tablespoons of the cheesecake mixture, and some berry sauce. Roll it up and top with more berries, or powdered sugar.
