Parmesan Asparagus

This Parmesan Asparagus is such a delicious way to eat asparagus. It's easy, and takes just a few minutes of prep, and is the perfect side dish for any meal.

Ingredients

  • 1 pound asparagus* (washed, dried, and ends removed)
  • 2 TBS olive oil
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1 tsp fresh squeezed lemon juice (optional)
  • 1/2 cup shredded Parmesan cheese (freshly grated preferred)

Instructions

  • Preheat the oven to 400 degrees Fahrenheit. Lightly grease a baking sheet with nonstick spray, or brush with oil.
  • Add the asparagus to the pan and drizzle with olive oil.
  • Sprinkle evenly with salt and pepper
  • Squeeze the lemon juice over the asparagus.
  • Place the asparagus in the oven to cook for about 8 to 10 minutes, or until the asparagus is tender but crisp, and cheese is golden.
  • Remove from oven and grate Parmesan cheese over the top of the asparagus.
  • Sprinkle fresh Parmesan cheese evenly over the top of the asparagus.
  • Return to oven to bake for about 5 more minutes until cheese is melted and lightly browned, and asparagus is tender.
