Rainbow Fruit Pizza

This rainbow fruit pizza is a beautiful fruit pizza topped with the best cream cheese frosting, and decorated with a variety of colored fruits, and made to look like a rainbow!

Equipment

  • Large Mixing Bowl

Ingredients

  • 16 oz sugar cookie dough (like Pillsbury)

For the Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • 1/2 cup butter (1 stick, softened)
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

For the Rainbow Fruit Topping:

  • 1/2 cup sliced strawberries
  • 11 oz mandarin oranges (drained)
  • 1/2 cup sliced pineapple
  • 2 kiwi (peeled and sliced)
  • 1/4 cup blueberries
  • 1/4 cup purple grapes

Instructions

  • Preheat the oven to 350 degrees. 
  • Line a large baking sheet with parchment paper or silicone liner.
  • Spread out cookie dough, and roll and shape into a rainbow shape. About 1/2 inch thick. 
  • Bake the cookie in the preheated oven for 10-14 minutes until the edges are lightly browned and the cookie looks barely set. 
  • Let the cookie cool completely to room temperature. 

For the Cream Cheese Frosting:

  • Put your cream cheese in a large mixing bowl and beat over medium speed until smooth. 
  • Add in the butter and stir till smooth. 
  • Add in the powdered sugar and vanilla extract and continue beating till the frosting is smooth and fluffy. 
  • Spread cream cheese frosting all over the top of the cooled rainbow cookie. 

For the Rainbow Fruit Topping:

  • Add the prepared fruit over the top of the rainbow in a rainbow pattern, red, orange, yellow, green, blue, and purple. 
  • Serve immediately, or chill for 2-4 hours before serving. 
  • Slice into long and thin pieces so each piece gets some of each of the fruits.
