Flourless Peanut Butter Chocolate Chip Cookies

These flourless peanut butter chocolate chip cookies are a naturally gluten free cookie, they're soft, and chewy, and packed with so much peanut butter flavor and lots of chocolate chips!

Ingredients

  • 1 cup peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1 large egg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (+ more for topping if desired)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Cream together the peanut butter and sugars until light and smooth. About 2 minutes.
  • Add in the egg and vanilla and mix.
  • Add in the baking soda and salt and stir everything together.
  • Add in the chocolate chips, and fold them evenly into the dough.
  • Shape the dough into 1 tablespoon to 1.5 tablespoon sized balls. Roll them into smooth balls.
  • Top each cookie ball with 3 or 4 chocolate chips if desired.
  • Bake for 8-9 minutes, until edges are just set.
  • Let the cookies cool on your baking sheet for about 10 minutes, then enjoy warm or transfer to a cooling rack. (I like to add even more chocolate chips to the top when I remove them from the oven, as needed to make them pretty)
