Bacon Pea Salad

Equipment

  • Large Mixing Bowl

Ingredients

  • 2 pounds frozen peas (thawed)
  • 1/2 cup diced red onion
  • 1 cup cubed cheddar cheese
  • 8 slices bacon (cooked)

For the Creamy Dressing:

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 TBS apple cider vinegar
  • 1 tsp granulated sugar (to taste)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)

Instructions

  • Rinse the peas off in cold water and let them thaw. Blot them dry with paper towels.
  • Crumble up, and cut the bacon into small pieces.
  • Add the peas, red onion, cheddar cheese, and bacon to a large bowl.

For the Creamy Dressing:

  • In another small bowl add the sour cream, mayonnaise, vinegar, sugar, salt, and pepper and stir them all together until combined.
  • Pour the dressing over the top of the pea mixture and toss it all together to evenly coat.
  • Cover the salad and place it in the fridge for 2 to 3 hours to let the flavors meddle.
  • Toss the salad again when ready to serve and enjoy.
