Tomato Basil Salmon

This Tomato Basil Salmon is a delicious oven roasted salmon topped with a simple tomato basil relish. It has such a fresh flavor, with a vibrant presentation, yet takes less than 30 minutes to make. This makes it a great option for a weeknight dinner, or when you need to impress.

Ingredients

For the Salmon:

  • 4 salmon fillets
  • 2 TBS olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Tomato Basil Relish:

  • 3-4 large roma tomatoes (diced)
  • 2 TBS finely chopped red onion
  • 2 TBS chopped fresh basil
  • 1 TBS olive oil
  • 1/2 TBS fresh squeezed lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 TBS balsamic glaze

Instructions

For the Salmon:

  • Preheat the oven to 400 F. 
  • Drizzle each salmon fillet with olive oil. Then sprinkle with salt and pepper on all sides.
  • Place the salmon, skin side down, on a baking sheet. Cook for 12 to 15 minutes, or until it reaches an internal temperature of 145 F.

For the Tomato Basil Relish:

  • While the salmon is cooking, add the tomatoes, red onion, basil, olive oil, lemon juice, salt and pepper to a small bowl. Stir them together, and set aside.
  • Remove the salmon from the baking sheet. Top each portion with tomato mixture, and drizzle with balsamic glaze. Serve hot.
