For the Salmon:
- 4 salmon fillets
- 2 TBS olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Tomato Basil Relish:
- 3-4 large roma tomatoes (diced)
- 2 TBS finely chopped red onion
- 2 TBS chopped fresh basil
- 1 TBS olive oil
- 1/2 TBS fresh squeezed lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 TBS balsamic glaze
For the Salmon:
Preheat the oven to 400 F.
Drizzle each salmon fillet with olive oil. Then sprinkle with salt and pepper on all sides.
Place the salmon, skin side down, on a baking sheet. Cook for 12 to 15 minutes, or until it reaches an internal temperature of 145 F.
For the Tomato Basil Relish:
While the salmon is cooking, add the tomatoes, red onion, basil, olive oil, lemon juice, salt and pepper to a small bowl. Stir them together, and set aside.
Remove the salmon from the baking sheet. Top each portion with tomato mixture, and drizzle with balsamic glaze. Serve hot.
