One Pot Lemon Chicken Pasta

Ingredients

  • 1 TBS olive oil
  • 2 cloves garlic (minced)
  • 1 1/2 cups water
  • 2 cups Rotini Pasta
  • 1-2 Grilled Chicken Breast (sliced)
  • 3/4 cup cream
  • 2 TBS lemon juice
  • zest of 1 lemon
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1 TBS snipped rosemary
  • 1/3 cup freshly grated Parmesan cheese

Instructions

  • In a medium saucepan add 1 TBS olive oil over medium heat. Add in minced garlic cloves, and sauté in the oil for 1-2 minutes, or until golden and tender.
  • Add in the water, and pasta noodles, and cook until the pasta is al dente, about 8-9 minutes.
  • Add in the chicken, heavy cream, lemon juice, lemon zest, salt, pepper, and rosemary.
  • To the saucepan; add cream, lemon juice and zest, chicken strips, salt & pepper, and rosemary. Stir it all together.
  • Continue to cook the mixture until the chicken is hot throughout.
  • Stir in the Parmesan cheese
  • Serve warm. Garnish individual bowls with more cheese, fresh rosemary, or lemon zest if desired.
