Chocolate Chip Shortbread Cookies

A buttery flaky chocolate chip shortbread cookie, the chocolate chips add just a little something extra when you bite into that chocolate morsel.

Ingredients

  • 1 cup unsalted butter (2 sticks, softened)
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla
  • 1 3/4 cups all purpose flour
  • 1/4 cup cornstarch
  • 1 tsp salt
  • 3/4 cup chocolate chips
  • flakey sea salt

Instructions

  • Cream together butter, sugar and vanilla until mixed together. 1 cup unsalted butter, 1/2 cup granulated sugar, 1/2 tsp vanilla
  • Add flour, and salt and mix in. 1 3/4 cups all purpose flour, 1/4 cup cornstarch, 1 tsp salt,
  • Stir in chocolate chips. 3/4 cup chocolate chips
  • Wrap dough in plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper..
  • Roll out dough to be about 1/4 inch thick.
  • Cut out cookies into 2 inch square or circular shapes with a knife or cookie cutters.
  • Place cookies on prepared baking sheet, about 1 inch apart.
  • Sprinkle each with flakey sea salt.
  • Bake for 10-12 minutes, or until the edges of the cookies turn golden brown.
