Copy Cat Thin Mints

- 13 Oreo cookies
- 1 1/2 cups semi sweet chocolate chips
- 1/2 tsp coconut oil
- 1/2 tsp peppermint extract
Separate Oreo cookies in half and scrape off the middle creme. 13 Oreo cookies
Combine chocolate, and coconut oil, a double boiler to melt. Stir often until chocolate is completely melted and smooth. 1 1/2 cups semi sweet chocolate chips, 1/2 tsp coconut oil
Stir in the peppermint extract. 1/2 tsp peppermint extract
Dip Oreo cookie half into the melted chocolate. Use a fork to flip it and coat both sides, then gently lift it out. chocolate using a fork and flip over to coat on both sides. Once coated remove cookie from chocolate and hit fork on the edge of the bowl to get excess chocolate to drip back in.
Tap the fork on the side of the bowl to let extra chocolate drip off.
Place dipped cookie onto a piece of parchment paper.
Repeat with remaining cookies.
Allow them to set for a couple hours till chocolate is hardened.
- Use Ritz Crackers: For a saltier flavor, and to avoid wasting the Oreo creme, use Ritz Cracker for the base instead.
- Storage Instructions:
Store the cookies in an airtight container at room temperature, or in the fridge for up to 2 weeks.
You can also freeze the cookies for longer storage. First flash freeze them on a parchment lined baking sheet, then freeze in any freezer safe container up to 3 months. Plus their actually delicious straight from the freezer ;)
