Mint Brownie Cookies
These mint brownie cookies are just like a mint brownie in cookie form. They're chewy and fudgy chocolate cookies, topped with a creamy mint frosting, and chocolate coating.

For the Brownie Cookies:
- 18.25 oz box brownie mix
- 2 large eggs
- 1/4 cup all purpose flour
- 1/4 cup vegetable oil
- 1 TBS water
- 1 tsp vanilla extract
For the Mint Buttercream:
- 6 TBS butter (softened - 3/4 stick)
- 2 cups powdered sugar
- 2 TBS half and half
- 1/4 tsp peppermint extract
- 3 drops green food coloring
- 1 sprinkle salt
For the Chocolate Topping:
For the Brownie Cookies:
Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
Add all the ingredients to a large bowl and stir them together until combined. The batter will be sticky.
Scoop the dough by the 1 TBS and place them onto the prepared baking pan, at least 2 inches apart.
Bake the cookies in the oven for 7-9 minutes, or until the tops are barely no longer shiny. (Don't overbake the cookies, they will continue baking on the pan when removed from the oven.)
Let the cookies cool completely before topping with mint frosting.

Add the chocolate chips to a small bowl, and melt them in the microwave for 30 seconds. Stir as much as you can, then melt in additional 15 second increments, until you can stir the chocolate totally smooth.
Drizzle or spoon the chocolate over the top of the frosting.
Let the cookies set until the chocolate is set.
