2TBSunsalted butter(softened)
2TBSgranulated sugar
2TBSbrown sugar
1/4tspvanilla extract
1egg yolk
1/2cupold fashioned oats
1/4cupall purpose flour
1/4tspbaking soda
1/4tspground cinnamon
1dashsalt
1/4cupraisins
Instructions
Preheat the oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper or a silicone liner.
Mix together the butter, sugar and brown sugar in a small bowl.
Add in the vanilla and egg yolk and stir well.
Add the oats, flour, baking soda, cinnamon, and salt, and stir it together until you have a nice soft cookie dough.
Add the raisins to the bowl, and fold them into the dough.
Scoop the cookie dough into 4 even balls, and place them a couple inches apart on the prepared baking sheet. **
Bake for about 9 to 11 minutes, or until the edges are golden brown and the tops are just set.
Remove the pan from the oven and allow the cookies to cool on the cookie sheet for a few minutes.
Transfer the cookies to a cooling rack to cool until you're ready to enjoy them.
Notes
**If your dough feels extra dry and a little crumbly, flatten your cookie balls slightly on your baking pan to help your cookies spread.
