Oatmeal Raisin Cookies for Two

Oatmeal raisin cookies for two are the perfect, soft, and chewy oatmeal raisin cookies, but with a recipe just for 4 cookies. It's the perfect recipe to satisfy your sweet tooth, for oatmeal raisin cookie lovers.

Ingredients

  • 2 TBS unsalted butter (softened)
  • 2 TBS granulated sugar
  • 2 TBS brown sugar
  • 1/4 tsp vanilla extract
  • 1 egg yolk
  • 1/2 cup old fashioned oats
  • 1/4 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1 dash salt
  • 1/4 cup raisins

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper or a silicone liner.
  • Mix together the butter, sugar and brown sugar in a small bowl.
  • Add in the vanilla and egg yolk and stir well.
  • Add the oats, flour, baking soda, cinnamon, and salt, and stir it together until you have a nice soft cookie dough.
  • Add the raisins to the bowl, and fold them into the dough.
  • Scoop the cookie dough into 4 even balls, and place them a couple inches apart on the prepared baking sheet. **
  • Bake for about 9 to 11 minutes, or until the edges are golden brown and the tops are just set.
  • Remove the pan from the oven and allow the cookies to cool on the cookie sheet for a few minutes.
  • Transfer the cookies to a cooling rack to cool until you're ready to enjoy them.

Notes

**If your dough feels extra dry and a little crumbly, flatten your cookie balls slightly on your baking pan to help your cookies spread.
