Ingredients

  • 6 oz high quality chocolate (divided)
  • 2/3 cup heavy cream
  • 1/3 cup corn syrup
  • 1/3 cup packed brown sugar (sifted after measuring)
  • 1/4 cup cocoa powder (sifted after measuring)
  • 1/4 tsp salt
  • 2 TBS unsalted butter
  • 1 tsp vanilla extract

Instructions

  • Add half the chocolate chips, heavy cream, corn syrup, brown sugar, cocoa powder, and salt to a medium heavy duty sauce pan over medium high heat. Bring the mixture to a slow boil, stirring occasionally, until the chocolate is melted.
  • Lower the heat to medium low and let the mixture continue to boil for 5 minutes, stirring regularly.
  • Remove the pan from the heat and stir in the remaining chocolate, butter and vanilla. Stir until the chocolate is smooth, and the mixture is totally melted.
  • Let the mixture cool for about 10 minutes in the pan, then transfer it to a jar to cool to room temperature before covering and storing in the refrigerator.
