Ingredients

For the Ground Beef:

  • 1 lb ground beef
  • 1/4 cup tomato sauce
  • 3 TBS taco seasoning

For the Salad:

  • 6 cups cut lettuce
  • 1/2 cup cherry tomatoes (cut into quarters)
  • 1/2 red onion (sliced)
  • 1 cup shredded cheddar cheese
  • 1/2 cup canned black beans (drained and rinsed)
  • 1/2 cup canned corn (drained)
  • 1 avocado (cubed)
  • 4 cups tortilla strips, or tortilla chips

Optional Toppings:

  • sour cream
  • salsa
  • guacamole
  • salad dressing

Instructions

For the Ground Beef:

  • Add the ground beef to a large skillet and cook over medium high heat. Break it into pieces and cook, stirring occasionally until browned. Drain out ant extra grease.
  • Add the tomato sauce, and taco seasoning and stir it together until coated, and absorbed by the beef, about 5 minutes.
  • Remove from the heat.

For the Salad:

  • Add the lettuce to a large bowl, and top it with your choice of other toppings, add the ground beef, and chips to the salad last.
  • Serve with your choice of salsa, or dressing.
