Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet, or two with parchment paper and set aside.
Cream together your butter and sugars for a couple minutes until light and fluffy. 3/4 cup unsalted butter, 1/2 cup granulated white sugar, 1/2 cup brown sugar
Stir in your egg, molasses, and vanilla until just combined. 1 large egg, 1/4 cup molasses, 1 tsp vanilla extract
Dump in the remaining ingredients and mix together until just combined. 2 1/2 cups All Purpose Flour, 1 tsp baking soda, 1 tsp ground ginger, 1/2 tsp cinnamon, 1/8 tsp ground cloves, 1/8 tsp ground nutmeg, 1/2 tsp salt
Scoop 1.5 to 2 TBS of dough and roll into a ball.
Add your granulated sugar to a small bowl for rolling. 3 TBS sugar
Roll your dough ball into the sugar mixture.
Place cookie dough balls onto the prepared cookie sheet, at least 2 to 3 inches apart.
Bake for 8-10 minutes until cookies puff up and are crinkly.
Remove the pan from the oven and allow cookies to cool for 5 minutes on the cookie sheet before removing to a cooling rack to cool completely.
