Mmm, I’ve said it before, I’ll say it now and I’m sure I’ll say it again. I love to snack. Now that I’m pregnant I can’t just count a snack as my meals like I used to, but I find myself hungry more often and not wanting to eat a whole meal when I am hungry means its perfect for me to grab a quick snack. I usually go for granola bars, or fruit snacks, or pretzels or crackers or chips. But to keep my snacks somewhat nutritious and still completely delicious I like to go with granola bars and when I can I like to go with homemade.
These granola bars are super quick to throw together, only 3 ingredients and only about 3 steps to make them too. And they are made with one of my favorite cereals, which just helps add to the delicious flavor. Plus, if you have a little bit of cereal left over from the box (like I did) then you can enjoy a bowl or two of cereal for a late night snack or for breakfast!
This recipe works very well halved as well, you’ll just cut all the amounts in half and cook it in an 8×8 inch baking pan instead of a 9×13.
This cereal is perfect for a great fall-inspired recipe like these granola bars which are great to send your kids with to school, or to eat when they get home.
Peanut Butter and Honey Bunches of Oats Granola Bars
Ingredients
- 4 cups honey bunches of oats (with almonds, optional)
- 1/2 cup peanut butter
- 1/2 cup honey
Equipment
- Large Mixing Bowl
Instructions
- Preheat oven to 350 degrees.
- Combine cereal, peanut butter, and honey in large bowl.
- Line a 9×13 baking dish with parchment paper (do not skip this)
- Pour cereal mixture into prepared baking dish and press around evenly.
- Place in oven and bake for 15 minutes.
- Remove from oven and allow to cool for a few minutes before slicing bars. Allow to cool completely before removing from baking dish.
Store wrapped in parchment paper and in an airtight container like pyrex or a ziplock bag for about a week.
Enjoy these yummy and easy granola bars as part of your breakfast or a snack.
And just to prove that even I make mistakes when cooking, my first batch of granola bars turned into “granola” because I didn’t line the dish and they stuck completely to the bottom of the pan as well as I over baked them a little bit. (But the granola tasted delicious too, and I will be eating it for breakfast this morning with milk!)

Hello. I tried using your recipe and I thinking that I had all of the ingredients but it turned out that I didn’t. When I started to make it I had the honey bunches of oats but it turned out that I had almost no honey and very little peanut butter so I replaced the honey with syrup instead and used as much peanut butter as I had (2 and a half tea spoons) and it still turned out amazing! when I tried taking it out of the pan after leaving it in the refrigerator overnight it crumbled so it’s more like granola ( this is the first time I’ve ever found myself liking just regular granola) but I got a few bars out of it. Thanks so much now I have something to take with me on the bus for breakfast!

I’m so glad that you liked it despite the crumbling. The additional peanut butter would make it stick to itself a little better, but sounds delicious as granola!

I love these! I make them often for my husband and I. I find if you don’t press them down really really well they crumble too easy. So I have been spraying a spatula with olive oil and using that to press it down real well with out covering everything in the yummy sticky mess!

Lol. Love the add in about cocoa pebbles, I can’t tell you the last time I had them. I was thinking of something healthier than cookies to bring into work… This may do the trick. If not this would be great for work breakfast or snack. Do you think almond butter could be used instead of peanut butter? What about adding dried fruit like cranberries or raisins?

AIMEE!!!! I made a comment to Husband last night that I really need to research granola bar recipes and start making them at home because every trip to the grocery yields at least four boxes because Husband LOVES the crunchy, nutty, honey-y, and peanut butter-y snack bars. THIS IS PERFECT. He’s not a fan of almonds but Honey Bunches of Oats would work just fine.
How do you store these bars to keep them fresh?
Something else I do for Husband’s crunchy, nutty, snack obsession: I buy several bulk-size bags of nuts at ALDI (peanuts, pecans, and walnuts) and a large container of raisins, mix it all together, and store in gallon-size Ziploc bags. For less than $20, he’s got TWO GALLONS of homemade trail mix that lasts for a while — he keeps one bag at home and the other at work in his desk. Occasionally, I’ll “sweeten it up” with M&Ms or chocolate candies too.

Nicole, I’m so glad I posted this just in time for you! The granola bars are a little bit soft and gooey still, which I like, but if you want them more crunchy I recommend baking them for just a few more minutes.
And I’m not sure exactly how long these will keep, but I’d guess a week or so, maybe a couple. But just keep them in an air tight container like a pyrex or ziplock bags, and I wrapped them in the parchment paper to keep them from sticking to each other.
Ps. I love trailmix and wish we had an ALDI!
