These Chile Colorado Burritos are delicious cheese smothered burritos full of flavorful and tender beef perfect for an easy and delicious meal everyone will love!
These Chile Colorado Burritos are so easy to make, and only take a few ingredients thrown into your crock pot. Perfect for an easy dinner any day of the week.
The meat gets so tender by cooking for several hours in the crock pot. Then you just assemble them into burritos, topped with enchilada sauce and cheese and bake then till the cheese melts. They’re so flavorful, and so delicious!
I adapted this recipe from Chef in Training.
These burritos are perfect paired with some Mexican style rice, tortilla chips, a quick side salad, or some grilled veggies.
Ingredients Needed to make Chile Colorado Burritos:
- stew meat – you cab also use flank steak cut up into cubes, or something similar
- red enchilada sauce – the “Colorado” name means colored red, so the red enchilada sauce gives it it’s name
- green chiles
- beef bouillon
- flour tortillas
- shredded cheese
How to make Chile Colorado Burritos?
- To make these Chile Colorado Burritos you’ll add the beef stew meat in a slow cooker with some red enchilada sauce, diced green chiles, and beef bouillon.
- Cook the mixture on low for several hours.
- Shred the meat.
- Scoop the meat out of the enchilada sauce into a large tortillas with your favorite burrito fillings, I like adding refried beans.
- Roll up the burritos and place them into a baking dish, seal side down.
- Pour the rest of the enchilada sauce over the top. Sprinkle the top of the burritos with shredded cheese.
- Bake them up until the cheese is melted.
Serve with your favorite toppings. I love them with sour cream!

- guacamole
- corn
- lettuce
- diced tomatos
- salsa
Tips for making Chile Colorado Burritos:
- This shredded beef is so delicious, also on top of salads, nachos, tacos, etc.
- Serve these yummy burritos topped with some sour cream, guacamole, pico de gallo, etc.
- You could also cook the mixture on high for 4 hours, instead of on low for 8.

Chile Colorado Burritos
Ingredients
For the Chile Colorado Beef:
- 2 lbs beef stew meat
- 28 oz red enchilada sauce (divided)
- 7 oz diced green chiles
- 1 tsp beef bouillon
For the Burrito Assembly:
- 1 cup refried beans
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
Instructions
- Add the stew meat, about 2.5 cups of enchilada sauce, green chiles, and beef bouillon to the bottom of a slow cooker.
- Cover the slow cooker with the lid and let it cook on low for 7 to 8 hours.
- Shred the meat slightly after it's done cooking.
For the Burrito Assembly:
- Preheat the oven to 400 degrees Fahrenheit. Grease a 9x13 baking dish with nonstick spray.
- Spread a couple Tablespoons of refried beans onto the middle of a tortilla.
- With a slotted spoon, scoop some meat out of the mixture and add it to the middle of the tortilla.
- Wrap the ends toward each other, then roll the rest up to make a burrito. Place it seam side down into the prepared baking dish. Repeat with additional tortillas, beans, and meat.
- Spread remaining enchilada sauce over the top of the burritos.
- Sprinkle cheese evenly over the top of the burritos.
- Bake the pan in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
- Serve hot.

Amber, I bet it would taste good with pork too. You might want to try a pork based bouillon instead of beef, but I really don’t think that would change the taste much. Plus, I love shredded pork in Mexican food so I think it would taste great! Let me know if you do try it!
