- granulated sugar

- all purpose flour

- powdered sugar
- butter
- heavy cream
- vanilla extract
- sprinkles
How to make a small batch of Funfetti Cupcakes?
- Stir together your butter and sugar in a medium sized bowl. Add in the egg white, milk, and vanilla extract and stir it until combined into the butter mixture.
- Then add in the flour, baking powder, salt and sprinkles, and stir it together until you have a nice soft batter.
- Scoop the batter evenly into 4 cupcake liners.
- Bake the cupcakes until a toothpick comes out clean. Let the cupcakes cool completely.
- Add the butter, powdered sugar, cream, and vanilla together and beat them for a couple minutes until nice and fluffy. Then fold in the sprinkles.
- Pipe the frosting evenly onto the cupcakes. Sprinkle additional cupcakes over the top.
Tips for making Small Batch Funfetti Cupcakes:
- Use Jimmie style sprinkles for the cupcakes and the frosting. Non pareil (the little balls) will bleed in them both and can turn the batter and frosting funky colors. But you can add a variety of sprinkle types on top of your frosting to make the cupcakes extra cute.
- You can also completely leave the sprinkles out of the cupcake batter and frosting if you just want plain (but delicious, soft, moist) vanilla cupcakes.
- Add a couple drops of food coloring to the buttercream to make it whatever color you love, to make these extra fun.
- If you want your cupcakes slightly taller, split your batter between 3 cupcake liners instead of 4.
How to store Funfetti Cupcakes?
While I’m assuming you wont have any cupcakes leftover, if you do they can be stored in an airtight container at room temperature for 3 to 4 days. Then you can enjoy one cupcake a day for a few days, if you’re not sharing 😉 This small batch funfetti cupcake recipe is the perfect thing for when you need a cupcake, without a whole batch. Small Batch Funfetti Cupcakes
Ingredients
- 3 TBS granulated sugar
- 2 TBS unsalted butter (softened)
- 1 egg white
- 2 TBS milk
- 1/4 tsp vanilla extract
- 6 TBS all purpose flour
- 1/2 tsp baking powder
- 1 pinch salt
- 1 TBS jimmie sprinkles
For the Funfetti Frosting:
- 2 TBS unsalted butter (softened)
- 1/2-3/4 cup powdered sugar
- 1 TBS heavy cream
- 1/4 tsp vanilla extract
- 1 TBS jimmie sprinkles (plus more for decorating)

Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a muffin pan with 4 paper liners.
- In a medium sized bowl whisk together the sugar and butter until well combined.
- Add in the egg white, milk, and vanilla extract and stir until just combined.
- Sprinkle in the flour, baking powder, salt and sprinkles and stir it together until just combined.
- Scoop the batter evenly into the prepared cupcake liners.
- Bake the cupcakes for 15-20 minutes, or until a toothpick comes out clean.
- Cool completely before frosting.
For the Funfetti Frosting:
- Add the butter to a small bowl and beat it until it is smooth.
- Add in the powdered sugar, cream, and vanilla extract and beat together for a couple of minutes until light and fluffy. Add a little bit more cream or powdered sugar as needed for the correct consistency.
- Fold in the sprinkles.
- Scoop the frosting into a piping bag with a piping tip, and pipe the frosting onto the cupcakes, or spread it on with a knife.
- Spread additional sprinkles evenly over the top of the cupcakes.
