This chocolate mint brownie trifle is an easy dessert to make, that looks so impressive when it’s all done. You could also make individual brownie trifle cups if you want everyone to have their own separate servings instead of scooping out of the same bowl.

Ingredients needed:

- brownie mix – instead of a brownie mix, make up a batch of your favorite homemade brownies instead
- eggs
- oil
- instant chocolate pudding
- cold milk
- heavy cream
- powdered sugar
- vanilla extract
- peppermint extract
- Mint Oreo Cookies – if you can’t find mint Oreos, regular Oreos work too, you just want the added crunch
How to make a Chocolate Mint Trifle?
- Brownies. Start by making your brownie layer, by mixing the brownies according to the directions on the back on their box and bake them up in a 9×13 pan until brownies are done, with a few moist crumbs on a toothpick inserted in the middle.
- Let the brownies cool completely, then cut them into small 1/2 inch sized pieces, and cover with a lid or place the pieces in a zip top bag so they don’t dry out.
- Chocolate Pudding. Make the chocolate pudding by mixing it with milk according to the package directions in a medium bowl, then set it aside to chill until needed.
- Mint Whipped Cream. Add the heavy whipping cream to a medium or large bowl (preferably the bowl of a stand mixer, but a hand electric mixer works as well). Whip up the cream until medium peaks form. Add in the sugar, vanilla, mint extract, and green food coloring, and whip them into the mixture until combined and stiff peaks form.
- Oreos. Add the mint Oreos to a gallon sized bag and crush them up, or chop them up on a cutting board with a knife.
- Assembling. Add one layer of brownies to the bottom of your trifle dish. Spoon chocolate pudding over the top of the brownies. Spoon the whipped cream over the pudding. Add a layer of the crushed Oreo cookies. Repeat with another layer of each, ending with a top layer of whipped cream and some crushed oreos over the top. Place the trifle in the fridge to chill for at least 2 hours, then serve. The trifle can also be chilled up to overnight to let the brownies soften more, and allow the flavors to meddle longer.
Tips and Trips:
- Andes Mints pieces would be a delicious addition to this trifle too.
- Use Cool Whip with mint extract and food coloring folded instead of homemade whipped cream.
- Add a layer of hot fudge for another delicious layer, or substitute it for the creamy pudding layer.
- This would be a delicious dessert for Christmas, add small pieces of candy canes to add a nice touch, or add red food coloring instead of green if desired.
- Make mini trifles in mason jars, small cups, or wine glasses for a super cute way to serve them as individual servings.
Make Ahead and Storing Instructions:
This is a great make ahead recipe because it stores well in the fridge. You can make it up to 1 day in advanced totally assembled as is and store the trifle covered in the fridge until needed.
If you want to make it another day or two before you can prepare the separate layers and store them in the fridge, then assemble the day of serving. You can store the separate parts for up to 2 days in the fridge.
If you won’t be serving this at your own home you can keep the layers separate and assemble when you get there, or make sure to carefully place the trifle in a cooler with ice surrounding it so it won’t fall over.

Chocolate Mint Trifle
Ingredients
For the Brownie Layer:
- 18 oz brownie mix
- 3 eggs
- 1/2 cup oil
For the Chocolate Pudding Layer:
- 5.9 oz instant chocolate pudding
- 3 cups cold milk
For the Whipped Cream Layer:
- 1 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp peppermint extract
- 1/2 tsp vanilla extract
- green food coloring
For the Oreo Layer:
- 2 cups chopped mint Oreos

For the Brownie Layer:
- Preheat the oven. Line a 9×13 pan with parchment paper.
- Prepare brownie mix with eggs, oil, and water, as listed on the box.
- Pour the brownie batter into the prepared baking pan, and baking the brownies according to the package directions, or until a toothpick comes out clean.
- Set aside to cool completely.
- Cut the brownies into small 1/2 inch sized pieces and remove them from the pan. Set aside till needed.
For the Chocolate Pudding Layer:
- In a medium sized bowl stir together the chocolate pudding mix and milk according to the box directions (mine said 2 minutes). Set aside till needed.
For the Whipped Cream Layer:
- Add the whipped cream to a medium sized bowl. Whip up the whipped cream with a hand mixer, or stand mixer at high speed until stiff peaks form.
- Add in the powdered sugar, mint extract, vanilla extract, and green food coloring, and whip again until combined.
For Assembling the Trifle Cups:
- Add one layer of brownies to the bottom of a 3QT trifle dish.
- Spoon half the chocolate pudding over the top of the brownies.
- Spoon half the whipped cream over the top of the pudding.
- Add half the Oreo pieces over the top of the whipped cream.
- Repeat with another layer of each.
- Enjoy immediately, or place the trifle in the fridge for a couple hours, up to overnight for the brownies to soften and the flavors to meddle a bit more.
