Lemon Fudge is the perfect lighter addition to a candy plate this holiday season. I am a California girl, so although I’m obsessed with pumpkin desserts, and apple recipes, I still try to cling to those summer flavors like lemon, fresh strawberries, and watermelon, all year long.
This lemon fudge does that for me, perfectly. It has the perfect light and refreshing taste in every bite. It’s sweet, tangy and melts in your mouth.
It has the perfect little bites of crunch throughout thanks to the lemon cookies that are mixed into the fudge. Lemon cookies are a treat I love on their own, and they’re the perfect addition to this easy microwave lemon fudge.
I love making microwave fudge recipes because they starts with just chocolate chips, sweetened condensed milk, and a little butter. This recipe uses white chocolate chips, because the lemon extract mixes perfectly with the melty white chocolate chips, to give this fudge that perfect creamy smooth lemon taste.
The white chocolate chips, sweetened condensed milk and butter are microwaved for just a couple minutes until the chocolate chips and butter are fully melted, and you can mix them all together till smooth.
Then you’ll add in the lemon extract and lemon cookies. You can also add in a couple drops of yellow food coloring if you want, to give the fudge that stronger yellow color. I added only 2 or 3 drops for just a light yellow color, but you could add more if you want a brighter yellow.
The fudge then needs to set. It may take a few hours at room temperature, or you can put it in the fridge to set a little more quickly.
This lemon cookie fudge is the perfect treat all year long, but you’ll especially love it this holiday season! It’s the perfect way to brighten up a dessert plate at a holiday party, or for taking to your neighbors as a holiday treat. It’s an unexpected holiday taste, but loved by all!
This lemon fudge should stay good in an airtight container at room temperature for about 1 week. If you keep it in the fridge it will last another week or two.

Lemon Cookie Fudge
Ingredients
- 24 oz white chocolate chips
- 14 oz sweetened condensed milk
- 2 TBS butter
- 1 1/2 tsp lemon extract
- 2 cups chopped Back to Nature California Lemon Cookies
- a few drops yellow food coloring
Instructions
- Put white chocolate chips, sweetened condensed milk, and butter in a large microwave safe bowl.
- Microwave for 2 minutes. Stir everything together as much as you can.
- Microwave in additional 30 second increments (up to 1 minute) until completely smooth.
- Mix in lemon extract, cookie pieces, and yellow food coloring.
- Pour into a 9x9 square baking pan.
- Allow to cool and harden completely before slicing and serving.

Looks like it’s going to be a family keeper! Don’t want to fail so does the pan need to be prepared so it doesn’t stick upon removal?

Can this be done with real lemon juice instead of extract? Just curious.

I haven’t tried it with real lemon juice. Lemon extract is much more potent, so you might need a lot more of it to get the flavor, but you might be able to use lemon zest!

Any store bought crunchy lemon cookie should work, I think lemon oreos, even with the cream filling would be really good!

Carr’s makes a really fantastic Lemon Ginger sandwich cookie that I think would be sooo good in this. The cookie is a crisp ginger cookie with a sweet-tart lemon cream filling!
