Greek Chicken Wrap Ingredients

- Chicken breasts
- Italian dressing – grab a bottle from the store, or make your own marinade with half olive oil, half red wine vinegar, an Italian seasoning spice mix, black pepper, and salt.
- Hummus
- Mixed green lettuce
- Sun-dried tomatoes
- Crumbled feta cheese
- Wraps or tortillas – I love using a Spinach tortilla, or wrap, or Carb Balance Tortilla.
How to make Greek Chicken Wraps
- Marinate the Chicken. Coat the chicken breasts in the Italian dressing in a ziplock bag, or container with a lid for about 30 minutes (you can cut to 10 minutes if you don’t have time) up to 2 hours.
- Grill the chicken. Cook the chicken on a grill or grill plate set to medium high heat. Rotate the chicken half way through to cook both sides of the chicken, and cook until the chicken reaches an internal temperature of 165 F. Let the chicken rest, then slice it into bite sized pieces.
- Add the toppings. Open a tortilla and spread the hummus down the center of the wrap. Top with the shredded lettuce, sundried tomatoes, and sprinkle the feta over the top. Add the chicken pieces.
- Close the wrap. Fold the wrap over the top and bottom of the fillings, then roll it up tightly like a burrito. Cut the wrap in half diagonally and enjoy. (You can hold it closed with a long toothpick if desired).

- Don’t overload the Wraps – Add just enough filling so you can enjoy a hearty meal, but you can still roll the wrap up neatly, and its not too messy to eat.
- Customize the Ingredients – Pick your favorite ingredients, and add other Mediterranean inspired ingredients such as roasted red peppers, artichoke hearts, baby spinach, red onion, or Kalamata olives.
- Make them vegetarian – Omit the chicken and substitute for marinated and grilled tofu of chickpeas instead.
- Different Carbs – You could also wrap the filling ingredients up with Pita Bread, or even add them to a bowl with rice, or quinoa, and a veggie mixture.
Storage Instructions
If you are making these wraps ahead of time, you can wrap them tightly in plastic wrap or foil and store them in the fridge for up to 24 hours. You can enjoy them directly from the fridge or let them warm up to room temperature to enjoy.
You can also prepare the chicken up to 2 or 3 days ahead of time, and store it in the fridge in an airtight container until you want to assemble the wraps.

Ingredients
- 2 chicken breasts
- 1/2 cup Italian dressing
- 6 wraps or tortillas
- 3/4 cup Hummus
- 3 cups mixed green lettuce (chopped)
- 3/4 cup sundried tomatoes (packed in oil, pull out with a fork to drain some of the oil)
- 8 TBS crumbled feta cheese
Instructions
- Add the chicken and Italian dressing to a ziplock bag, or container with a lid to marinate. Recommended is for 30 minutes, no more than 2 hours.
- Preheat a grill or grill plate to medium high heat, about 400 degrees.
- Grill the chicken, flipping over after about 5 minutes, until cooked through and an internal temperature of 165 F is reached.
- Take a wrap or tortilla, and spread hummus down the middle.
- Top with shredded lettuce, sundried tomatoes, feta cheese, and chicken.
- Fold the top and bottom of the wrap in toward the filling, then roll it up tightly on one side like a burrito.
- Cut the wraps diagonally down the middle, and enjoy.
