Goat Cheese Pizza

This Bacon, and Fig Goat Cheese Pizza is a delicious and unique twist on pizza with a combination of crispy bacon, caramelized shallots, tangy goat cheese, and sweet fig jam all on top of a crust of homemade pizza dough. This pizza is impressive enough to serve to guests, or when you want to try something new!

Ingredients

  • 2 TBS olive oil
  • 3 shallots (quartered)
  • salt
  • pepper
  • 1 pound pizza dough (for 9 inch pizza)
  • 1/4 cup fig jam
  • 2 cup shredded mozzarella cheese
  • 6 slices bacon (cooked and crumbled)
  • 4 oz goat cheese

Instructions

  • Preheat the oven to 500 degrees Fahrenheit. Place the pizza stone inside while the oven is heating up
  • Add the olive oil and shallots to a saute pan and cook over medium heat. Sprinkle with salt and pepper. 2 TBS olive oil 3 shallots, salt, pepper
  • Lower the temperature and cook another 10-20 minutes, stirring occasionally until the shallots are soft and caramelized. Remove from the heat and set aside.
  • Divide the pizza dough into 2 to 3 portions. On a pizza peel sprinkled with corn flour roll out one portion of pizza dough to about 9-10 inches diameter and 1/4 inch to 1/2 inch thick. 1 pound pizza dough
  • Spread the fig jam out on the dough, to about 1/2 inch of the edge. 1/4 cup fig jam
  • Sprinkle the shredded cheese over the top of the jam. 2 cup shredded mozzarella cheese
  • Sprinkle the bacon pieces evenly over the top of the cheese. 6 slices bacon
  • Spread the caramelized shallots evenly over the cheese too.
  • Crumble the goat cheese evenly over the top of the cheese. 4 oz goat cheese
  • Transfer the pizza carefully to the preheated pizza stone in the oven.
  • Bake for 10 to 15 minutes, until the cheese is melted and the crust is golden.
  • Remove the pizza from the oven, and garnish the pizza with fresh basil, parsley, or arugula.
  • Let the pizza cool for 3 to 4 minutes, then slice and serve warm.
