Goat Cheese Pizza
This Bacon, and Fig Goat Cheese Pizza is a delicious and unique twist on pizza with a combination of crispy bacon, caramelized shallots, tangy goat cheese, and sweet fig jam all on top of a crust of homemade pizza dough. This pizza is impressive enough to serve to guests, or when you want to try something new!

- 2 TBS olive oil
- 3 shallots (quartered)
- salt

- 1 pound pizza dough (for 9 inch pizza)
- 1/4 cup fig jam
- 2 cup shredded mozzarella cheese
- 6 slices bacon (cooked and crumbled)
- 4 oz goat cheese
Preheat the oven to 500 degrees Fahrenheit. Place the pizza stone inside while the oven is heating up
Add the olive oil and shallots to a saute pan and cook over medium heat. Sprinkle with salt and pepper. 2 TBS olive oil 3 shallots, salt, pepper
Lower the temperature and cook another 10-20 minutes, stirring occasionally until the shallots are soft and caramelized. Remove from the heat and set aside.
Divide the pizza dough into 2 to 3 portions. On a pizza peel sprinkled with corn flour roll out one portion of pizza dough to about 9-10 inches diameter and 1/4 inch to 1/2 inch thick. 1 pound pizza dough
Spread the fig jam out on the dough, to about 1/2 inch of the edge. 1/4 cup fig jam
Sprinkle the shredded cheese over the top of the jam. 2 cup shredded mozzarella cheese
Sprinkle the bacon pieces evenly over the top of the cheese. 6 slices bacon
Spread the caramelized shallots evenly over the cheese too.
Crumble the goat cheese evenly over the top of the cheese. 4 oz goat cheese
Transfer the pizza carefully to the preheated pizza stone in the oven.
Bake for 10 to 15 minutes, until the cheese is melted and the crust is golden.
Remove the pizza from the oven, and garnish the pizza with fresh basil, parsley, or arugula.
Let the pizza cool for 3 to 4 minutes, then slice and serve warm.
