For the Strawberry French Toast Casserole:
- 14 oz French Bread loaf
- 5 large eggs (beaten)
- 2 1/2 cups whole milk
- 3/4 cup granulated sugar
- 1 tsp orange zest
- 2 TBS vanilla extract
- 1 tsp ground cinnamon
- 1 cup sliced strawberries
For the Streusel Topping:
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup cold butter (cut into pieces)
For the Strawberry French Toast Casserole:
Spray a 9x13 baking pan with nonstick spray.
Cut up the bread loaf into 1 inch pieces, and spread it throughout the baking pan.
In a large bowl, mix together the eggs, and milk.
Add the sugar, orange zest, vanilla and cinnamon to the egg mixture, and stir them together. Pour the mixture over the bread.
Add the strawberries in between the pieces of the bread, pushing them into the pieces so they aren't sticking out.
Cover the pan with plastic wrap and stick it in the fridge for one hour, or overnight.
For the Streusel Topping:
Add the flour, brown sugar, cinnamon and salt to a small bowl, and stir them together.
Cut the butter into the flour mixture with a couple forks, or pastry cutter until it is in pea sized pieces.
Place it in an airtight container and store it in the fridge overnight.
For the French Toast Casserole:
Preheat the oven to 350 degrees Fahrenheit. Remove the casserole from the fridge while the oven is preheating.
Sprinkle the streusel topping evenly over the top of the French toast.
Bake the casserole for 45 to 55 minutes, or until hot throughout.
