Chocolate Coconut Bars – Magic Cookie Bars
About a month ago Nate and I attended a family Christmas party (on my dad’s side of the family). I knew the Christmas party was going to be extended family, including my grandpa’s siblings, but what I didn’t know is that the party would include anyone that could come from my great great grandparents and down. As in my grandpa’s grandpa. So it included a lot of people, most of whom I didn’t know. Anyway, I was asked to bring a dessert to share, and as you know I am happy to accept any excuse to try out a new dessert recipe. So for the party I decided to make these magical chocolate coconut bars. (I had eaten these before, but never made them myself, so I was excited to try them out and they did not disappoint). Anyway, the party was fun, though I only talked to family I already knew (didn’t really branch out). Good food. Good people. Good times.
- 3 1/2 cups graham crackers, ground (I think 2 packages)
- 1/4 cup sugar
- 1 cup (2 sticks) unsalted butter, melted
- 3/4 cup pecan pieces
- 1 cup milk chocolate chips
- 1/2 cup butterscotch chips (optional)
- 1 can (14 ounces) sweetened condensed milk
- 1 1/2 cups sweetened shredded coconut
- Preheat oven to 375 degrees.
- Line a 9×13 pan with waxed paper, and spray with nonstick spray.
- Stir together graham cracker crumbs, sugar and butter in a large bowl.
- Evenly press graham cracker mixture into the bottom of the 9×13 pan.
- Bake for 10 minutes, rotating after 5.
- Cool on a wire rack for 20 minutes.
- Sprinkle chocolate chips, butterscotch chips, and pecans over the crust.
- Pour condensed milk over the top, tilt the pan from side to side to spread it to all corners.
- Sprinkle the top with coconut.
- Sprinkle with a few more chocolate and butterscotch chips.
- Bake for about 15 minutes, until coconut is browned slightly.
- Cool completely on a wire rack.
- Remove using waxed paper, and cut into bars (about 1×2)

- Enjoy with a glass of cold milk.
