Chocolate Coconut Bars – Magic Cookie Bars

About a month ago Nate and I attended a family Christmas party (on my dad’s side of the family).  I knew the Christmas party was going to be extended family, including my grandpa’s siblings, but what I didn’t know is that the party would include anyone that could come from my great great grandparents and down. As in my grandpa’s grandpa. So it included a lot of people, most of whom I didn’t know. Anyway, I was asked to bring a dessert to share, and as you know I am happy to accept any excuse to try out a new dessert recipe. So for the party I decided to make these magical chocolate coconut bars. (I had eaten these before, but never made them myself, so I was excited to try them out and they did not disappoint). Anyway, the party was fun, though I only talked to family I already knew (didn’t really branch out). Good food. Good people. Good times.

  • 3 1/2 cups graham crackers, ground (I think 2 packages)
  • 1/4 cup sugar
  • 1 cup (2 sticks) unsalted butter, melted
  • 3/4 cup pecan pieces
  • 1 cup milk chocolate chips
  • 1/2 cup butterscotch chips (optional)
  • 1 can (14 ounces) sweetened condensed milk
  • 1 1/2 cups sweetened shredded coconut
  1. Preheat oven to 375 degrees.
  2. Line a 9×13 pan with waxed paper, and spray with nonstick spray.
  3. Stir together graham cracker crumbs, sugar and butter in a large bowl.
  4. Evenly press graham cracker mixture into the bottom of the 9×13 pan.
  5. Bake for 10 minutes, rotating after 5.
  6. Cool on a wire rack for 20 minutes.
  7. Sprinkle chocolate chips, butterscotch chips, and pecans over the crust.
  8. Pour condensed milk over the top, tilt the pan from side to side to spread it to all corners.
  9. Sprinkle the top with coconut.
  10. Sprinkle with a few more chocolate and butterscotch chips.
  11. Bake for about 15 minutes, until coconut is browned slightly.
  12. Cool completely on a wire rack.
  13. Remove using waxed paper, and cut into bars (about 1×2)
  14. Enjoy with a glass of cold milk.featured I'm topsy turvy tuesdays
