If you love peanut butter, these flourless peanut butter cookies are a delicious cookie to add to the mix. They’re so easy to make with only bowl, and a few ingredients (that you most likely already have on hand!).
I saw flourless peanut butter cookies around the internet for a while before I made these, and they claimed to be as good as regular peanut butter cookies. I was a little skeptical at first, but considering how much I love peanut butter cookies I figured I should give it a try. And these cookies did not disappoint.
All you need is peanut butter, brown sugar, white sugar, vanilla extract, one egg, baking soda, and salt. See, only 7 ingredients and I bet you have them all in your pantry right now. The only thing you need to note, is for the peanut butter, don’t use any of the natural kinds, the oils would make them spread too much. You can use crunchy peanut butter if you’d like.
These cookies are made without flour, or butter, so they’re naturally gluten free. Plus they’re super simple and quick to whip up a batch in just a few minutes.
How to make Flourless Peanut Butter Cookies?
Cream together your peanut butter with the brown and white sugars, until they are light and smooth. Add in the egg and vanilla and stir together. Add in the baking soda, and salt and stir it all together till you have a nice soft dough.
Shape the dough into small balls, rolling them up to be smooth. Then flatten each of them with a criss cross pattern using your fork. Bake for about 8 minutes until the edges are set and start to turn golden. Let the cookies continue to cool on the baking sheet for about 10 minutes, then serve them warm, or let them continue cooling on a cooling rack.
How long do flourless peanut butter cookies stay good?
These cookies can stay for up to 1 week if kept in an airtight container at room temperature. The cookie dough can be stored for 4 to 5 days in an airtight container in the refrigerator.
I still love my simple peanut butter cookies for most occasions, but these flourless peanut butter cookies are really dang good.

Flourless Peanut Butter Cookies
Ingredients
- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 tsp vanilla
- 1 large egg
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Cream together your peanut butter and sugars until light and smooth. About 2 minutes.
- Add in your egg and vanilla and mix.
- Add in your baking soda and salt and stir everything together.
- Shape dough into 1 tablespoon to 1.5 tablespoon sized balls.
- Flatten each ball with a criss cross pattern using your fork.
- Bake for 8-9 minutes until edges are just set.
- Let them cool on your baking sheet for about 10 minutes, then enjoy warm or transfer to a cooling rack.
