These Cookie Butter Cookie Bars have the best soft oatmeal cookie crust, are loaded with chocolate chips, and gooey cookie butter. They have everything you love about a chewy oatmeal cookie, that is loaded with even more delicious ingredients in the middle. They’re easy to make in one pan, and perfect for sharing with friends!

These Cookie Butter Bars are one of my newest favorite ways to eat cookie butter, that’s besides just eating it straight from the jar by the spoonful. They’re inspired by my classic Carmelitas, but instead of caramel filling, they have a layer of gooey cookie butter.
They bake up so nicely with the combination of the oats, brown sugar, chocolate chips, and cookie butter, that these bars have the best chewy texture, best warm flavors, and are perfect when your sweet tooth is calling! If you love cookie butter as much as me, you should also try our Cookie Butter Truffles, or White Chocolate Chip Biscoff Cookies!

Why you’ll Love these Bars
- So Easy to Make: Made with a super easy cookie base, and you don’t need to scoop and bake individual cookies, its all layered and baked up in the one pan!
- The Cookie Butter Filling is so good: Creamy cookie butter adds a sweet, and lightly spiced flavor that pairs perfectly with the oatmeal cookie base!
- The Best Chewy Texture: The oatmeal cookie layers are buttery, soft and chewy, and pair so nicely with the chocolate chips and cookie butter filling!

Ingredients Needed
This is a quick overview of some of the ingredients you’ll need for this Cookie Butter Bars Recipe. Specific measurements and full recipe instructions are in the printable recipe card below.
- Unsalted Butter: If you want to use salted butter, I recommend skipping the added salt later.
- Brown Sugar: Brown Sugar only gives these bars the best chewy texture, and almost a caramel like flavor.
- Old Fashioned Oats: Use old fashioned oats for the best chewy texture in your bars. Quick oats or Steel Cut Oats will change the texture of your bars.
- Chocolate Chips: I always prefer milk chocolate chips, but any chocolate chips work great.
- Cookie Butter: You can use any brand of cookie butter, like Biscoff or Private Selection or Trader Joe’s Speculoos, etc.

How to make Oatmeal Cookie Butter Bars?

Step 1: Make the Oatmeal Cookie Base. Mix together the butter, brown sugar, and vanilla in a large mixing b bowl. Add in the flour, oats, baking soda, and salt and stir it all together until you have a soft cookie dough.

Step 2: Press the Cookie Dough. Press half of the oatmeal cookie mixture into the bottom of the lined pan. Bake the bottom of the bars for about 8 to 10 minutes.

Step 3: Add the Layers. Sprinkle the chocolate chips evenly over the cooked crust. Microwave the cookie butter for about 30 seconds until it is warm enough to pour. Press pieces of the remaining oatmeal cookie dough between your hands to flatten and place them on top of the cookie butter.

Step 4: Bake the Bars. Place the bars in the oven to bake until the edges are lightly brown and the top is set. Remove the bars from the oven and let them cool completely, then remove them from the pan and slice into pieces!
Tips and Tricks:
- Line the Pan: Line the pan with parchment paper or foil for easy removal of the bars, and easier clean up of your pan!
- For Clean Slices: While I’m usually a proponent for warm and gooey desserts, you need to let these bars cool completely before slicing so you can get nice even slices and have pretty cookie bars. You can always microwave the bars individually for about 10 seconds if you want them warm.
- Double Batch: Double the recipe and bake the bars in a 9×13 pan if you are making these for a group or party.

Storage Instructions
Store the cooled Cookie Butter Bars in an airtight container at room temperature for up to 4 days. The bars can also be frozen by wrapping them individually in plastic wrap and placing those in a freezer safe bag. Thaw them at room temperature, then enjoy again!

If you’re a fan of Cookie Butter, these Cookie Butter Bars are a must make! They have the best oatmeal cookie layers, and sweet cookie butter center in every bite! They’re easy to make, easy to share, and such a good cookie bar! You’ll love sharing these at your next get-together with friends, or freeze a few squares for whenever you need something sweet!
