These strawberry pretzel parfaits are the perfect sweet and salty treat, with delicious layers of no bake cheesecake, crunchy salty sweet pretzels, and fresh strawberries.
These amazing parfaits are sweet individual sized desserts, based off one of my existing favorites, strawberry pretzel jello salad. The original is made in a 9×13 pan with a baked layer of sweetened salty pretzels, the a no bake cheesecake layer, all topped with strawberry jello filled with fresh strawberries.
This delicious twist is made with the same flavors, but without jello. These sweet strawberry pretzel parfaits, have a layer of crunchy pretzels, mixed with butter and brown sugar (just like the original). Then a layer of a quick homemade no bake cheesecake, then fresh strawberries. Repeat each layer again, and top the whole thing with some whipped cream and a fresh strawberry for looks.
These darling strawberry pretzel parfaits can be served right alongside dinner if you want, but I think they’re a little bit more of a dessert. They’re perfect for serving right after dinner though, for a dessert that is light, and sweet, and creamy, and crunchy, and a little salty too.
These treats are pretty enough to serve at something like Easter dinner, or a baby or bridal shower, but easy enough to make during any day of the week. This recipe makes enough for about 8 individual cups, but if you want to double it for a big group, or even half it for a small one, you can!
I made my cups extra big, so I only made 4 cups but each serving was huge! I recommend cutting them in half with smaller cups, or just doing one layer of cheesecake, one layer of pretzels, one layer of strawberries and whipped cream. This way you can serve more people and each parfait is the perfect light and refreshing dessert, without going overboard!
I love that the weather is starting to warm up, and along with lemon desserts like this lemon curd cheesecake, I want strawberries and fresh berries every day too. These strawberry pretzel parfaits are one of my new favorites, and I think you’ll love them too!
Instead of using fresh strawberries, you could also use a variety of other fresh fruits.

- blueberries
- blackberries
- mandarin oranges
- pineapple
- mango

Strawberry Pretzel Parfait
Ingredients
For the Cheesecake Layer:
- 8 oz cream cheese (softened)
- 1 cup sugar
- 8 oz cool whip
For the Pretzel Layer:
- 2 cups pretzels
- 1/4 cup butter (melted)
- 2 TBS brown sugar
For the Strawberry Layer:
- 2 cups chopped strawberries
- 2 TBS sugar
For the Cool Whip Topping:
- 1 cup cool whip

For the Cheesecake Layer:
- Beat the cream cheese in a stand mixer, or with a hand mixer until nice and smooth.
- Add in the sugar and mix over medium speed, for about 2-3 minutes, until the mixture is nice and smooth and creamy.
- Carefully fold in the cool whip, until it's smooth. Set aside
For the Pretzel Layer
- Put pretzels in a ziplock bag and seal. Crush them until they are broken into small chunks. Some will be crumbs, some chunky pieces.
- Mix melted butter and brown sugar in with crushes pretzels until pretzels are coated well. Set aside.
For the Strawberry Layer:
- Stir together strawberries and sugar in a medium sized bowl.
For Parfait Assembly:
- Spread about 2 TBS of the no bake cheesecake into the bottom of a glass or plastic cup.
- Spread about 2 TBS of the pretzel mixture evenly over the cheesecake mixture.
- Sprinkle about 2 TBS of strawberries over pretzel mixture.
- Repeat with one more layer of cheesecake, pretzels, and strawberries.
- Top with a couple tablespoons of cool whip.
- Serve immediately.
