I have several times, but how to solve this dilemma, ta da, homemade Lemon Dijon dressing to the rescue. It is fresh and easy to make and only requires a few ingredients that you most likely will have in your pantry. And I am always on the lookout for homemade salad dressings – I just love the idea of a fresh salad with a fresh dressing. So not only will Lemon Dijon dressing solve your salad making problem but it is fresh and delicious and EASY.
Our family eats a lot of salad. We like all kinds of salad; salads with greens, salads with fruit, salads with chopped vegetables. We eat salads to be healthy and yes to lose weight. We figure as long as we complement our lettuce with healthy choices like spinach and kale or pears, grapes, and tangerines, or broccoli, cucumbers, and tomatoes we are getting a filling and satisfying healthy dinner. But we don’t want to sabotage all that goodness with a heavy dressing or one laden with lots of sugars or fats. This lemon Dijon dressing solves all that, with no added sugar (you use honey) and very little fat (only 1/4 cup of canola oil) and then the fresh ingredients of red onion and lemon juice. Because there is such a subtle flavor to the dressing and you only need a little it really brings out all that goodness you have put into your salads.

- ½ cup fresh squeezed lemon juice
- ⅓ cup honey
- ¼ cup canola oil
- 1 TBS red onion (finely chopped)
- 2 tsp Dijon mustard
- ½ tsp sea salt
- Add all your ingredients into a jar with a tight fitting lid
- Shake well
- Place in your fridge for 30 minutes for the flavors to blend
- Just before serving shake again
- Drizzle over your favorite salad
