<p>This cake gets everything right. One year my dad made a chocolate raspberry cake for my birthday, with a cake mix, but I had to dress up the cake a little to make it all from scratch for you guys, but keep the same great flavors. </p>



<p>It&rsquo;s a cake that really impresses, because it looks like it came from a bakery, but is totally doable for any average home baker, with our simple steps and ingredients. </p>



<p>The chocolate cake layers are soft, rich, and stay moist. The raspberry filling is made with real raspberries, and adds a fresh, contrast that keeps the cake from feeling too heavy. All paired with the smooth <a href="https://lmld.org/chocolate-buttercream-frosting/">chocolate buttercream</a>, and rich <a href="https://lmld.org/how-to-make-chocolate-ganache/">chocolate ganache</a> on top that really takes the cake over the top! I adapted this cake recipe from <a href="https://sallysbakingaddiction.com/chocolate-raspberry-cake/" target="_blank">Sally&rsquo;s Baking Addiction</a>.</p>

<li><strong>Unsalted Butter</strong>: &nbsp;always recommend using unsalted butter because different brands add different amounts of salt to their butter, so you can get the exact amount of salt you want. If you use salted butter I recommend leaving out the added salt called for in the frosting.</li>



<li><strong>Vanilla Extract</strong>: A splash of <a href="https://bestchristmasdesserts.com/homemade-vanilla-extract" target="_blank">vanilla extract</a> makes every dessert better, you&rsquo;ll use this in your cake, frosting, and raspberry sauce.</li>



<li><strong>Powdered Sugar</strong>: Also known as confectioners, it sweetens the buttercream frosting base</li>



<li><strong>Raspberries</strong>: You can use fresh or frozen raspberries</li>

<p><strong>Step 1: Make the Raspberry Filling. </strong>Add the raspberries, sugar, and lemon juice to a small sauce pan. In a small separate bowl whisk together the water and cornstarch, add it to the raspberry mixture. Simmer over medium for a few minutes, stirring occasionally until the sauce thickens a bit. Stir in the vanilla extract, and set the filling aside to cool for a few hours.</p>

<p><strong>Step 3: Make the Cake Batter.</strong> Whisk the eggs, milk, vegetable oil, and vanilla together until combined. Pour the wet ingredients into the bowl with the dry ingredients and whisk them together. Add the hot water into the batter and mix on low until everything is combined.</p>

<p><strong>Step 4: Bake the Cake</strong> <strong>Layers.</strong> Pour the cake batter into greased round cake pans, and bake until a toothpick can be inserted in the middle of the cake and comes out clean. Remove from the oven and let the cake layers cool completely in the pan.</p>

<p><strong>Step 5: Make the Chocolate Buttercream. </strong>Add the butter, powdered sugar, cocoa powder, heavy cream, vanilla, and salt to a stand mixer and mix until smooth. Increase to high speed and mix for 1 minute.</p>

<p><strong>Step 6: Frost the Cake. </strong>Place one round cake on a cake stand. Lightly cover the top with chocolate buttercream. Spoon additional buttercream into a bag and pipe and edge around the top of the cake. Spread the raspberry sauce onto the cake, inside the border. Repeat with second layer, then add the top layer. Frost the cake with remaining chocolate buttercream.</p>

<p><strong>Step 7: Add Chocolate Ganache. </strong>If desired, chop up a chocolate bar and add it to a small bowl. Heat up heavy cream in another bowl and then pour it over the chocolate. Let it sit a couple minutes to melt, then stir until it is smooth. Let it sit to cool for about 20 minutes, then spoon the ganache over the cake. Let the ganache set.</p>

<li><strong>Add Coffee: </strong>Use hot coffee instead of water in the chocolate cake to deepen the chocolate flavor. It won&rsquo;t taste like coffee, I promise.</li>



<li><strong>DIY Buttermilk: </strong>Make a homemade buttermilk substitute by adding 1 Tablespoon of White Vinegar to a measuring cup, then fill it the rest of the way to the 1 cup measurement line. </li>



<li><strong>Room Temperature Ingredients:</strong> Let the eggs, milk, butter and xx sit at room temperature for about 1 hour before adding them to the cake or frosting to make sure everything mixes easily and smoothly. </li>



<li><strong>For High Altitude:</strong> If you&rsquo;re above 4,000 feet above sea level, you&rsquo;ll add 2 extra TBS flour, take away 2 TBS of granulated sugar, lower the baking soda to 1 tsp and the baking powder to 3/4 tsp.</li>



<li><strong>Servings:</strong> The cake slices into 16 very generous sized pieces. If you want to serve more people you can cut the cake slices thinner or cut the slices in half top to bottom if someone wants less frosting. You can easily get 20 to 24 slices of cake (Pipe the roses smaller so you have one for each slice to help if needed).</li>

<p>Cover the leftover cake and store it in the fridge for up to 5 days. The cake can be served chilled, or you can let it sit at room temperature for about 30 minutes before enjoying. </p>



<p>If you want to make the cake in advance you can make the separate components a day early and store the buttercream, and raspberry sauce in the fridge until you&rsquo;re ready to assemble the cake.</p>

<li><strong>Add Coffee: </strong>Use hot coffee instead of water in the chocolate cake to deepen the chocolate flavor. It won&rsquo;t taste like coffee, I promise.</li>
<li><strong>DIY Buttermilk: </strong>Make a homemade buttermilk substitute by adding 1 Tablespoon of White Vinegar to a measuring cup, then fill it the rest of the way to the 1 cup measurement line.</li>
<li><strong>Room Temperature Ingredients:</strong> Let the eggs, milk, butter and xx sit at room temperature for about 1 hour before adding them to the cake or frosting to make sure everything mixes easily and smoothly.</li>
<li><strong>For High Altitude:</strong> If you&rsquo;re above 4,000 feet above sea level, you&rsquo;ll add 2 extra TBS flour, take away 2 TBS of granulated sugar, lower the baking soda to 1 tsp and the baking powder to 3/4 tsp.</li>
<li><strong>Servings:</strong> The cake slices into 16 very generous sized pieces. If you want to serve more people you can cut the cake slices thinner or cut the slices in half top to bottom if someone wants less frosting. You can easily get 20 to 24 slices of cake (Pipe the roses smaller so you have one for each slice to help if needed).</li>
<li><strong>Storage Instructions:</strong> Cover the leftover cake and store it in the fridge for up to 5 days. The cake can be served chilled, or you can let it sit at room temperature for about 30 minutes before enjoying.</li>
