- Chex Cereal – you can use all Rice Chex, or a mix of Rice, Corn and Wheat Chex for a mix in textures and flavors
- Mini Pretzels
- Chopped Pecans
- Unsalted Butter
- Brown Sugar
- Granulated Sugar
- Ground Cinnamon
- Vanilla Extract – adds just a little flavor to the cinnamon caramel mixture
- Salt – skip the salt if you are using salted butter
How to make Cinnamon Sugar Chex Mix
- Prepare. Preheat the oven to 275 F and line a baking pan with parchment paper. Add the Chex cereal, pretzels, and pecans to a large bowl and stir them together.
- Make the cinnamon caramel sauce. Add the butter, brown sugar, granulated sugar and cinnamon to a medium sauce pan and heat over medium until the sugars are dissolved, and you have a nice caramel sauce. Cook for 4 to 5 minutes total. Pour the mixture over the top of the cereal mixture, and gently fold it to coat the mixture in the caramel sauce.
- Bake. Pour the coated cereal onto the prepared baking sheet. Bake it in the oven, stirring every 15 minutes. Remove it from the oven and let it cool at room temperature for 15 minutes.
- Add the cinnamon sugar coating. In a small bowl, add the remaining brown sugar, sugar, and cinnamon and stir them together. Pour the Chex mixture back into the large bowl, add the cinnamon sugar coating and stir it to coat the cereal in the mixture. Enjoy warm, or let it cool and enjoy later.
Cinnamon Chex Variations:
- Nuts. Change the nuts you use to your favorite, you could use cashews, peanuts, or walnuts instead. Leave out the nuts if you want and add an extra 1 cup of pretzels instead.
- Chocolate. After coating the mixture, spread it back onto the baking sheet. Melt some white chocolate chips, or regular chocolate chips in the microwave and then add it to a small ziplock bag. Snip the corner and drizzle the melted chocolate over the top of the mixture. Let it set, then enjoy.
- More Mix Ins. Add in 1 cup of caramel bits, cookie pieces, or cinnamon chips to the mixture, after baking, for a yummy flavor!
How to store Churro Chex Mix?
Let the mixture cool to room temperature, then transfer it to an airtight container. It will stay good at room temperature for up to 2 weeks.
Can I make it ahead of time?
This is a great make-ahead dish. It will stay great for a couple of weeks in an airtight container, so make it a couple days before your party as needed!

Churro Chex Mix
Ingredients
For the Chex Mix:
- 10 cups Chex Cereal (use a mix, or your favorite – I used all Rice Chex)
- 1 cup Mini Pretzels
- 1 cup Chopped Pecans
For the Cinnamon Sauce:
- 1 cup Unsalted Butter
- 1 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 2 TBS Ground Cinnamon
- 1/2 tsp Vanilla Extract
- 1/4 tsp Salt
For the Cinnamon Sugar Coating:
- 1/4 cup Brown Sugar
- 2 TBS Granulated Sugar
- 1 TBS Ground Cinnamon
Instructions
For the Chex Mix:
- Preheat the oven to 275 F. Line a large baking sheet with parchment paper, set it aside.
- Add the Chex Cereal, pretzels, and pecans to a large bowl and stir them together.
For the Cinnamon Sauce:
- Add the butter, brown sugar, granulated sugar, and cinnamon to a medium pot over medium heat. Continue to cook for about 4 to 5 minutes, until the sugars are dissolved, and the mixture starts to boil.
- Pour the cinnamon mixture over the Chex mixture and gently mix to coat it all together.
- Spread the Chex mixture onto the prepared sheet.
- Bake for 45 minutes, stirring every 15 minutes.
- Remove the pan from the oven, and let it cool at room temperature for 15 minutes.
For the Cinnamon Sugar Coating:
- Stir the coating ingredients together in a small bowl.
- Add the cereal back to the large bowl, and add the cinnamon sugar coating. Toss it together with a rubber spatula.
- Enjoy warm, or let it cool completely to enjoy later.
