Today I’ve got another delicious Fourth of July dessert for you! Firecracker cookies. These cookies are like an explosion in your mouth, with a fun topping of pop rock candies!
These firecracker cookies are such a fun way to celebrate the Fourth of July. The cookies are especially delicious, and are such a fun way to celebrate your patriotism.
The crackle of these cookies as you take every bite is the perfect thing to remind you of real fireworks. And the look like a firework exploded on top of the cookies.
I promise kids and adults alike will love these cookies. Especially the kids will love the pop rock candies in every bite 😉
How to make Firecracker Cookies?
These firecracker cookies are super easy to make with a sugar cookie base. You can use a homemade sugar cookie recipe, or you can buy premade (un-iced) cookies from the store, or your favorite store bought cookie dough works too. Bake the cookies up on a cookie sheet until they are a nice golden color on the edges.
Top the cookies with your favorite icing, any white icing will do, buttercream frosting, cream cheese frosting, homemade or from the store will work. Spread the frosting evenly over the top of the cookies with a knife.
Then sprinkle the red and blue pop rocks over the top of the icing in a random pattern. This way it looks like fireworks exploded all over your cookies 😉
If you want to make the cookies in advanced, you can bake up the cookies, but don’t decorate with frosting or the pop rocks until ready to serve. The pop rocks will only stay crunchy and only “pop” for a short amount of time after going on the frosting.

Firecracker Cookies
Ingredients
- 16 oz sugar cookie dough (or pre-baked sugar cookies)
- 1 cup white frosting (buttercream, cream cheese, vanilla, etc.)
- 2 0.33oz packages Strawberry or Watermelon Pop Rocks
- 2 0.33oz packages Tropical Punch Pop or Cotton Candy Pop Rocks **
Instructions
- Make your sugar cookies in circular shapes according to their directions.
- When your cookies are cooled, spread frosting evenly over the top of each cookie.
- Sprinkle the pop rocks over the top of the frosting when ready to serve.
