Let’s talk about comfort food with a kick! This Chicken Curry Soup is everything you want for a cold day, or any day really. It’s warm, creamy, and perfectly spiced with ginger, coriander, cumin, paprika, and more, with just a touch of heat! It’s loaded with flavor!
To make this curry soup, we are basically making our own homemade curry powder, by mixing together ground coriander, cumin, ginger, turmeric, and black pepper. The spices give this soup such a spicy, warm flavor that just work so well together with the chicken, and vegetables in this soup.
You can also add some potatoes, noodles, or rice to the soup to make it even heartier, I’ll give you tips on adding those below.

Ingredients Needed

- Olive oil – For sautéing the veggies and spices.
- Yellow onion – Adds a sweet, aromatic base.
- Carrots – Adds a nice sweetness to the soup
- Minced garlic – A little garlic makes everything better.

- Granulated sugar – Adds a little sweetness, and balances the spice.
- Ground Coriander
- Ground Cumin
- Paprika
- Turmeric
- Salt
- Black pepper
- Ground cloves
- Cayenne pepper
- Chicken – this is a great recipe to use up leftover chicken, or a rotisserie chicken
- Bay leaf
- Chicken broth – The base of the soup, go for low sodium chicken broth to control the salt
- Heavy cream – This makes the soup nice and creamy, but try Coconut Milk instead if desired
How to make Chicken Curry Soup?
Step 1: Sauté the vegetables. Add the olive oil to a large pot and heat over medium. Add in the onions, and carrots and cook until tender about 10-15 minutes. Add in the garlic and sauté for another minute.
Step 2: Add in the Spices. Add the tomatoes, and all the spices, and stir it all together to coat the veggies.
Step 3: Add in the Chicken and Broth. Add in the shredded chicken, bay leaf, and pour the chicken broth on top. Simmer for about 20 minutes.
Step 4: Add in the Cream. Remove from the heat and add in the heavy cream to make it creamy. Serve with your fresh toppings.
Tips and Tricks:
- Add Potatoes: To make the soup heartier, add about 2 large potatoes, diced. Add the potato after you add the garlic and let it cook for a couple minutes, then add the chicken and chicken broth and let the potatoes cook as the broth simmers.
- Add Noodles or Rice: Cook Noodles or Rice according to their package directions in another pot (sorry, it will add another dish) to give the dish a little more substance. I recommend adding about 2-3 cups of cooked rice, or about 2-3 cups cooked noodles. I like rice noodles, or Chines egg noodles.
- Topping Ideas: Soup is extra delicious with toppings. Try sliced shallots, chili oil, thai basil, fresh cilantro, or fresh squeezed lime.
- Customize: Try adding bell peppers, zucchini, or squash for extra veggies. Fresh spinach is a great addition too (but only add that the last 2 minutes of cooking.
Storage Instructions
Store any leftover soup in an airtight container in the fridge for up to 4 days. The soup can also be frozen for up to 3 months. I like to freeze in individual portions with these Souper Cubes. Reheat it on the stove in a small pot over medium high until hot again.

- 2 TBS olive oil
- 1 yellow onion (diced)
- 2 carrots (diced)
- 1 1/2 TBS garlic (minced)
- 1 tomato (diced)
- 1 TBS white sugar
- 1 TBS ground coriander
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp turmeric
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/8 tsp red cayenne pepper
- 2 chicken breasts (cooked, shredded)
- 1 bay leaf
- 6 cups chicken broth
- 1/3 cup heavy cream
Optional Toppings:
- sliced shallots
- fresh thai basil
- fresh cilantro
- chili oil
- fresh squeezed lime juice
Instructions
Chicken Curry Soup
- In a large pot, heat over medium high and add the olive oil. Add in the onions and carrots and sauté until tender, about 10 to 15 minutes. 2 TBS olive oil, 1 yellow onion, 2 carrots
- Add the minced garlic, and sauté 1 additional minute. 1 1/2 TBS garlic
- Add the diced tomatoes and the spices, sauté for 2 additional minutes. 1 tomato, 1 TBS white sugar, 1 TBS ground coriander, 2 tsp cumin, 2 tsp paprika, 2 tsp turmeric, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp ground ginger , 1/4 tsp ground cloves, 1/8 tsp red cayenne pepper
- Stir in the shredded chicken, and add the bay leaf on top. 2 chicken breasts, 1 bay leaf
- Add the chicken broth, simmer for 20 additional minutes 6 cups chicken broth
- Remove from heat and stir in the heavy cream. 1/3 cup heavy cream
- Serve with your favorite toppings, and with a side of naan bread or over rice. sliced shallots, fresh thai basil , fresh cilantro , chili oil , fresh squeezed lime juice
