- brown sugar

- egg yolk
- baking soda

- all purpose flour
- old fashioned oats – they give the best hearty, chewy, thick, oatmeal cookie texture
- ground cinnamon
- raisins
How to make Oatmeal Raisin Cookies for two?
- Cream together the butter and sugars in a small bowl. I usually just use a fork and mix it until the butter is all combined.
- Add in the egg yolk and vanilla extract and mix it together until combined.
- Then add in all the dry ingredients; oats, flour, baking soda, cinnamon, and salt.
- Fold in the raisins. Scoop the dough into 4 even balls and place them on a lined cookie sheet, at least 2 to 3 inches apart.
- Place them in the oven to bake until the tops and edges look just set. Let them cool about 5 minutes on the baking pan then transfer them to a cooling rack to cool more, or enjoy warm!
Tips for making Oatmeal Raisin Cookies for two:
- If you’re not an oatmeal raisin fan, you are more than welcome to substitute the raisins called for in the recipe for the same amount of chocolate chips instead.
- I recommend using old fashioned oats, for the best thick, chewy, texture in your cookies. Quick oats may absorb your wet ingredients differently, so you may have drier cookies without that good chewy oatmeal texture.
- If your dough feels extra dry and a little crumbly, flatten your cookie balls slightly on your baking pan to help your cookies spread.
- If you’re doubling the recipe for 8-10 cookies, don’t use 2 egg yolks, just use 1 whole egg instead.

Oatmeal Raisin Cookies for Two
Ingredients
- 2 TBS unsalted butter (softened)
- 2 TBS granulated sugar
- 2 TBS brown sugar
- 1/4 tsp vanilla extract
- 1 egg yolk
- 1/2 cup old fashioned oats
- 1/4 cup all purpose flour
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1 dash salt
- 1/4 cup raisins
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper or a silicone liner.
- Mix together the butter, sugar and brown sugar in a small bowl.
- Add in the vanilla and egg yolk and stir well.
- Add the oats, flour, baking soda, cinnamon, and salt, and stir it together until you have a nice soft cookie dough.
- Add the raisins to the bowl, and fold them into the dough.
- Scoop the cookie dough into 4 even balls, and place them a couple inches apart on the prepared baking sheet. **
- Bake for about 9 to 11 minutes, or until the edges are golden brown and the tops are just set.
- Remove the pan from the oven and allow the cookies to cool on the cookie sheet for a few minutes.
- Transfer the cookies to a cooling rack to cool until you're ready to enjoy them.

These Oatmeal Raisin Cookies are delicious. I 3x’s the recipe as the grandkids were coming over and needed a few extra for them. I received rave reviews from all who ate the cookies, thank you for this moist/soft cookie recipe!! The flavor of the cookie was amazing. However, mine turned out a bit dry. I scooped the flout and used an egg yolk so I’m not sure what went wrong. I will try it again and maybe use a large egg yoke and maybe a bit less flour. However, the taste was delicious!

AMAZING!!!! Had to fight off hubby, who is a chocolate chip cookie lover, cause he couldn’t get enough of them.
I used a small cookie scooper and had about a dozen mini cookies.

These are incredible!!! I made them gluten free by using Bob’s Red Mill 1-to-1 flour and GF oats. I omitted the raisins and used dark chocolate chips and flaked coconut. I made them jumbo 🤣 and it still made 8 XL cookies. They taste like a bakery cookie! Will definitely be making again. This recipe is incredible. Thank you!

My cookies did not spread in the oven, and I ended up flattening them myself and put them back in for two more minutes. Then two of them fall apart even after cooling. The other reviews were great. Any idea what I may have done wrong?

Shoot, I’m sorry! It sounds like your cookie dough was a little dry. Maybe your egg yolks were small? Or you over measured the flour? Make sure to spoon and level the flour when you measure it, and if it still seems a little dry you could add a teaspoon of milk to the batter too.

My egg yolk was large. I spooned and leveled but I don’t use a scale right now – taking a bit to get into that habit. The cookie dough did seem like it was falling apart when I was scooping it out of the mixing bowl so maybe it was dry?
Also, I was in a rush and didn’t bring the yolk to room temp.
Next time I’m sure it will go fine. I’ll pay attention to whether the dough seems dry.

Every once in a while my husband really wants oatmeal chocolate chip cookies. I found this recipe for a small batch and tried it. Really, really good! Instead of raisins I used mini chocolate chips and threw in chopped pecan as well. I found the percentages work very well. We made 6 two inch round cookies that were thick – they did not spread out. Oh! and I baked at 375 for 8-9 minutes. The outside was a bit crisp and the inside chewy. Perfect.

This was fabulous.
I made a few changes: only 1 tbsp of white sugar, 2 Tbsp of date sugar, used einkorn flour, omitted the egg yolk, instead added 1 tbsp of golden flax meal, added 3 Tbsp of very hot water. Omitted the raisins, instead 1/4 coconut let sit for 15 mins and mixed in 1Tbso of cacao nibs.
Flattened it on a cast iron skillet and baked for 20 minutes

Not hard just multiply the recipe by three or by four. If you need a tablespoon use 3 if you need 1/4 cup use 3/4 cup. These cookies were delicious in the small batch.
