Are you as family time hungry as I am? I imagine so. Life is busy. There is work, school, play dates, housework, yard work. Busy, busy, busy. There are days all I want to do is sit, curl up next to my hubbie and talk or watch a movie together or even just close my eyes on his shoulder and rest.
But somewhere in all that busyness I need to prepare dinner. And I want a quick, healthy, delicious meal; not just cereal. Ha ha! I love a good chicken pasta dish but that usually requires bringing out a pot to boil water in and cooking the pasta plus another pan or grill to cook my chicken and then another bowl to toss everything in together to finally serve our dinner. Waiting for water to boil can seem like it never will – you know the idiom “a watched pot never boils” – which really takes away from the family time you and I crave.
I don’t have to worry about that with my Lemony Chicken One Pot Pasta. I can prepare dinner quick, even in 10 minutes or less with Barilla® Pronto™ Pasta. All in ONE pot too. Even the chicken is ready in minutes! I loved that. My frozen chicken strips were already cooked and they heated up in 3 to 4 minutes right in with my pasta.
It was perfect. I sauteed a little garlic, tossed the pasta and water into my pan. Cooked the pasta according to the package directions, added a little cream with fresh squeezed lemon juice, lemon zest, rosemary, and the chicken strips. Sprinkled in some Parmesan cheese and our family had a healthy, effortless, and tasty Lemony Chicken One Pot Pasta on the table within moments. Which meant Craig and I had a quiet but perfect evening together; relaxing and enjoying our time with each other. Family time craving satisfied!

- 2 cups Pronto Ritoni Pasta
- 1½ cups water (follow package instructions)
- 6 to 8 Tyson Grilled Chicken Strips
- 1 TBS olive oil
- 2 cloves garlic
- ¾ cup cream
- 2 TBS lemon juice
- zest of 1 lemon
- 1 tsp salt (or to taste)
- ½ tsp black pepper (or to taste)
- 1 TBS snipped rosemary
- ⅓ cup Parmesan cheese
- In a medium saucepan add 1 TBS olive oil over medium heat
- Mince the garlic cloves and saute in the olive oil for 2 minutes or until tender
- Add the pasta, add the water - cook according to package directions until pasta is al dente
- To the saucepan; add cream, lemon juice and zest, chicken strips, salt & pepper, and rosemary
- Stir and cook until chicken is heated throughout, about 4 minutes
- Stir in Parmesan cheese
- Serve; garnish with more cheese, rosemary, lemon or zest if desired
