How to make Apple Pie Egg Rolls?
Step 1: Make the Apple Pie Filling. Combine the apples, sugar, butter, lemon juice, and cinnamon in a small sauce pan over medium heat. Stir together.
Step 2: Thicken the Mixture. Stir the cornstarch and water together in a small bowl, then add the mixture to the apples. Cook for a few minutes until the juices start to thicken, and the apple start to get tender. Remove from heat and stir in the vanilla. Transfer to a bowl to cool for a bit.
Step 3: Roll up the Egg Rolls. Add two Tablespoons of the apple mixture to the middle of an egg roll wrapper. Follow the directions on the package to roll the egg roll up, by first folding the middle over the top of the filling, then folding in the sides, then rolling it up all the way. Brush the edges with water to seal them.
Step 4: Cook the Egg Rolls. Heat about 1 inch of oil in a low sauté pan or pot over medium heat. Add a few of the egg rolls at a time to the oil and cook until golden, flipping them over half way to cook both sides evenly. Remove from the oil and place on paper towels to soak up the extra grease. Sprinkle with cinnamon sugar or powdered sugar if desired.
Tips and Tricks:
- Check the oil temperature for best results. You want the oil to be 350 F for a nice crispy exterior while allowing the interior to cook completely, and not letting the outside burn.
- Cook in Batches: Don’t overcrowd the skillet or air fryer, as this can lead to uneven cooking.
- Add Some Texture: Chopped walnuts, pecans, or a sprinkle of raisins can be added to the filling for extra texture and flavor.
Storage Instructions
These peach cobbler egg rolls are best eaten when they’re fresh, so I recommend only frying as many as you’re going to eat if you can. You can store the unfried egg rolls in a ziplock bag for up to 2 days in the fridge, then fry as needed).
However you can also store the leftovers in an airtight container in the fridge for up to 2 days. Reheat them in the oven or air fryer at 350 F for a few minutes until crispy outside, and warm throughout.
These Apple Pie Egg Rolls are a fantastic treat that delivers classic fall flavors in a crispy form. They’re going to be a hit with anyone you’re willing to share them with! So grab a few apples and give this fun twist on apple pie a try!
