- egg white – coats the pecans and helps the sugar mixture to stick to them
- water
- vanilla extract – adds a little flavor
- pecan halves – the star of the show, these have a nice texture and flavor
- granulated sugar and brown sugar – this gives the pecans their sweetness, and a nice caramel flavor. The sugar is cooked and turns crunchy when cooked.
- ground cinnamon – adds a nice cinnamon flavor, feel free to experiment with other spices
- salt – just a pinch to enhance the flavor, and balance out the sweetness
How to Make Candied Pecans
- Beat the egg white, water, and vanilla together in a small bowl until nice and fluffy.
- Add the pecans to a bowl and pour the fluffy egg whites over them, fold them together to coat the pecans in the egg white mixture.
- Coat in sugar. Stir the brown sugar, granulated sugar, cinnamon, and salt together. Then pour the sugar mixture over the pecans and stir it together to coat.
- Bake the pecans. Pour the mixture onto a lined baking sheet. Bake for about 40-45 minutes, stirring the mixture every 15 minutes. Remove from the oven and let the nuts cool, then enjoy!
Cinnamon Pecans Tips and Tricks:
- Stir the pecans occasionally while they are baking to prevent the nuts from clumping together, and to ensure they are evenly coated in the cinnamon sugar.
- Watch closely. The last 10 or so minutes of baking, watch the pecans closely, because they can quickly go from nicely caramelized to overbaked.
How to store Cinnamon Roasted Pecans?
Let the pecans cool down completely, then you can transfer them to an airtight container and store them at room temperature for up to 2 weeks. The pecans may start to slightly soften over time, but will still taste delicious.

Can I use other nuts instead of pecans?
This pecans in this recipe can easily be substituted for a different nut. You could make candied almonds, walnuts, or cashews instead.

Definitely! You can double or triple the recipe by scaling up all of the ingredients fto make a bigger batch. You will need multiple baking sheets to ensure they cook evenly, and I recommend rotating the baking pans in the oven as well.

Cinnamon Sugar Pecans
Ingredients
- 1 egg white
- 1 tsp water
- 1/2 tsp vanilla extract
- 4 cups pecan halves
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 TBS cinnamon
- 1/2 tsp salt
Instructions
- Preheat the oven to 300 F. Line a baking pan with parchment paper.
- Add the egg white, water, and vanilla to a medium bowl and beat it until frothy, with peaks.
- Add in the pecans and stir them to coat them in the egg white mixture.
- Stir the brown sugar, granulated sugar, cinnamon, and salt in a small bowl.
- Add the cinnamon sugar mixture to the nuts and stir them together to coat.
- Pour the pecans onto the prepared baking sheet.
- Bake for 30 to 40 minutes, stirring every 15 minutes. Check the nuts often the last 10 minutes or so to keep them from burning.
- Remove from the oven and let the nuts cool on the pan, then enjoy.
