No bake cookies are such a delicious, and simple chocolate and peanut butter cookie. With the perfect soft oat texture, these cookies are a classic!
I don’t think many people can say no to chocolate and peanut butter together. They’re one of the best food combinations on earth – whether it’s for these amazing no bake cookies, or this chocolate peanut butter fudge, or this chocolate peanut butter bundt cake.
These chocolate peanut butter no bake cookies are a classic. Most of you have probably had them already in your life at some point, but maybe you are like me and you need a reminder about how good they are. And if you haven’t had them – well you need to change that asap 😉
These cookies are also a fun memory, because once upon a time when Nate and I were just dating (now we’ve been married for over 11 years!!) my mom would occasionally email Nate random questions to get to know him better. One of her questions was asking what his favorite cookie was and he said “no bake cookies”. So she passed the message on to me, and that day I made no bake cookies for him.
Anyway, these cookies are SO EASY to make, and like the name says, you literally don’t bake them. They’re the perfect summertime treat because you can have an amazing dessert, with hardly any effort at all.

How to make No Bake Cookies?
No bake cookies are made up of only 7 ingredients, most of which you probably have in your pantry right now. You’ll need butter, sugar, milk, and cocoa powder which you’ll bring to a boil in a medium sized sauce pan. You’ll boil the mixture for one and a half minutes. Remove the mixture from the heat.
Then stir in the vanilla extract, peanut butter and oats. Scoop the cookie mixture onto a cookie sheet lined with a silicone liner or parchment paper. If you can handle waiting, let the cookies cool completely, which will allow them harden to hold their shape. It’s that easy.

I was just thinking of these the other day, because I refuse to turn my oven on until September or October, and I want chocolate cookies. HowEVer, every time I have tried making them here (as opposed to California), they haven't set up. The flavor is good, but they won't keep any kind of cookie shape. I'm going to have to try your recipe. We always called them "road apples." I had no idea they were "chocolate no-bakes." :)I think I have different faves for different moods. Chocolate chip cookies (no nuts) are a definite comfort food. Pumpkin chocolate chip cookies are divine. I love snickerdoodles. And I love the really spicy, dense gingersnaps I used to make. Mmmmm . . . coooookieeeees.
