They’re easy to make, super customizable, and guaranteed to make your kids laugh at the dinner table.

This recipe takes a simple chicken sandwich and makes it extra fun for Halloween. With a few creative toppings, you have a dish straight out of a Halloween movie. You can add whatever extra toppings, or sauces to make these sandwiches a favorite for everyone!
I love easy over here, and the recipes I find myself making on repeat are always the easiest ones too. We’re making crispy chicken sandwiches on repeat at our house with frozen chicken patties, popped in the air fryer or oven, and these are such a fun way to make them extra spooky for Halloween!

Ingredients Needed

- Hamburger Buns: Brioche, or your favorite burger buns work great.
- Chicken Patties: I like the Just Bare Lightly Bread Chicken Bread Fillets, but pick your favorite.
- Sliced Cheese: I like using a white cheese like pepper jack, provolone, swiss, or Monterey Jack.
- Lettuce: Adds some crunch and color
- Green Olives with Pimentos: Add these on top with toothpicks for the monster eyes.
- Sandwich Sliced Pickles: Adds a cute tongue to make the monster extra silly.
- Toothpicks: To hold the “eyes” in place.
How to make Monster Chicken Sandwiches
Step 1: Cook the Chicken Patties. I like to air fry them to make them extra crispy, but baking them works great too. Cook them however suggested on their package.
Step 2: Cut the Cheese. Use a knife to cut zig zag teeth along one edge of each cheese slice.
Step 3: Assemble the Sandwiches. Add lettuce, a cooked chicken patty, a slice of pickle, and cheese teeth. Make sure the tongue and teeth stick out so they are visible. Add your favorite sauce. Close the sandwich with the top bun. Add a toothpick in each olive and press them into the bun to look like monster eyes. Enjoy.
Tips and Tricks:
- Make it “bloody”: Add some of ketchup on top of the patty, dripping down to look like a little blood dripping from his mouth.
- Get the Kids Involved: Let the kids make their own monsters with their choice of toppings. They can pick their favorite cheese, sauce, sandwich toppings, and use black olives instead of green if desired.
- Customize: Make the sandwiches your own by adding whatever toppings you like, bacon, jalapenos, onion, avocado, etc.

Make Ahead Instructions
You can prep the ingredients ahead of time, but I recommend assembling the sandwiches right at serving time so none of the sandwich gets soggy.

Chicken Sandwich Monsters
Ingredients
- 4 Chicken Patties or Breaded Chicken Fillets
- 4 Pepper Jack Cheese Slices
- Green Olives with Pimentos
- Toothpicks
- 4 Hamburger Buns
- Lettuce
- 4 Pickle Sandwich Slices
Instructions
- Cook your chicken in the air fryer or oven according to the directions on the back of the packaging. 4 Chicken Patties or Breaded Chicken Fillets
- While they are cooking, cut "teeth" into one side of each of your cheese slices, cutting out little triangles, set aside the slices. 4 Pepper Jack Cheese Slices
- Stick your green olives onto toothpicks (you'll need 1-3 per sandwich). Green Olives with Pimentos, Toothpicks
- When the chicken is done cooking, assemble the sandwich. Put the lettuce, chicken, a pickle slice hanging out, topped with the cheese with the teeth hanging out, and the top burger bun. 4 Hamburger Buns, Lettuce, 4 Pickle Sandwich Slices
- Top each sandwich with olive eyes. Enjoy immediately.
