I have been really terrible at sharing dinner recipes with you guys lately and for that I apologize. As you know I’m a huge dessert lover – sorry! But also, we’ve been trying to clear out our freezer by eating lots of leftovers that we froze, as well as things like frozen taquitos, chicken strips, etc. They’re perfect when we’re in a hurry and this meal is too! These chicken alfredo lasagna roll ups couldn’t be easier for dinner with one secret ingredient.

The rotisserie chicken makes this meal so quick to make, and so flavorful and delicious! You’ll also need, ricotta, an egg, some seasonings, mozzarella cheese, parmesan cheese, lasagna noodles and alfredo sauce (if you used premade sauce, it’ll keep it extra easy).

Serves: 12
Ingredients
  • 12 lasagna noodles
  • 2 cups alfredo sauce
  • 15 oz ricotta cheese
  • 1 egg
  • ½ cup parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 TBS italian seasoning
  • 1 tsp garlic powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
Instructions
  1. Preheat your oven to 350 degrees.
  2. Cook your lasagna noodles according to package directions.
  3. Spread 1 cup of you alfredo sauce on the bottom of a 9x13 inch pan.
  4. Mix together your egg and your ricotta in a medium sized bowl. Mix in your parmesan and 1 cup of your mozzarella cheese.
  5. Add in your italian seasoning, garlic powder, pepper, and salt.
  6. Add in your shredded chicken and mix everything together.
  7. Put ¼ cup of the cheese chicken mixture on each lasagna noodle and roll up lasagna noodle. Put roll up into your prepared pan. Repeat with additional mixture and noodles.
  8. Spread remaining alfredo sauce over the top of your roll ups. Top with additional mozzarella cheese.
  9. Bake in oven for 15 minutes.

  2. I made this tonight but instead of chicken I just used spinach, which turned out nicely too.

  3. This was decent, it wasn’t amazing, but it was good. My mom and brother liked it more than I did and said they would like it again. My mother and I are vegetarians and so I made it without chicken and we both agree it was just too much cheese by itself. If I make this again, I think adding broccoli will help balance with the cheese. I did make the sauce wrong, I used 2 cups of heavy whipping cream and I didn’t have the extra ingredients to just double the recipe, and so that might have made the sauce taste quite bland. Also, I wasn’t thinking and added seasoning to the sauce without trying it first to see if it needed any, I used a little salt, pepper, garlic, and Italian seasoning, so that might have also been a problem.. Over all I think I would give this a 6.5. I would like to make it again adding broccoli, making the sauce correct, tasting the sauce before adding a little seasoning then adding a little if needed.. But thank you for sharing the recipe!

  4. Not as great as I expected. It was a lot of work when regular chicken Alfredo is much easier…I will stick to the normal chicken Alfredo.

    1. Sorry you didn’t like it Jennifer, for me it only takes a couple minutes longer than traditional chicken alfredo, but its a fun twis t for my family that we love!

  12. You left out the oven temperature. Also, if you are baking these only 15 minutes you must be using “oven ready” lasagna noodles which you did not specify. I’m afraid that I’ve wasted ingredients or will end up waiting a long time for this to finish in the oven at ????? temperature.

    1. I’m so sorry, I corrected the recipe with the oven temperature. You don’t want to use oven ready noodles because you boil them before so they are soft and you can roll them up with the cheese inside. They will be done in 15 minutes because everything is already cooked and just needs to get warmed.
